Chocolate-flavored conchas dipped in melted chocolate recipe-
16 Conchas Ingredients
6 1/2 cups of Flour (AP or bread flour)
1 1/2 cups of sugar
1 1/2 cups of Luke warm milk
4 room-temperature eggs
1/2 cup of butter (salted)
2 Tbsp vegetable shortening
2 Tbsp vanilla
1 Tbsp baking powder
4 Tbsp active dry yeast
1 tsp salt
2 Tbsp cinnamon
+ extra flour for dusting
Concha topping ingredients
1 cup flour
1 cup vegetable shortening
1 cup powdered sugar
+ extra flour for dusting
Food coloring or hot chocolate of color
Bake at 350 Degrees (f) for 20 to 22 minutes
8 Conchas ingredients
3 cups of flour
1/2 cup sugar
3/4 cup of lukewarm milk
2 room temperature eggs
1/4 cup of butter (salted)
1 Tbsp vegetable shortening
1 Tbsp vanilla
1/2 Tbsp Baking powder
2 Tbsp active dry yeast
1/2 Tsp salt
1 Tbsp cinnamon
+ extra flour for dusting
Concha topping ingredients
1/2 cup flour
1/2 cup vegetable shortening
1 /2cup powder sugar
+ extra flour for dusting
Food coloring or hot chocolate of color
???? for the concha cake use 8 concha cake ingredients and the same for the topping
Bake 25 to 28 minutes and let rest another 30 mins

In this episode of In The Kitchen With Matt, I will show you how to make Navajo Fry Bread. This easy fry bread dough recipe is what is used for Navajo Tacos. Frybread has been around for many many years, and several different cultures have their own version of it. This is a traditional fry bread used by the Native Americans. This particular iteration was created in 1860s by the Navajo Nation. They were given flour, salt, baking powder, and lard by the US Government to sustain them on their Long Walk from Arizona to New Mexico. I live in Arizona, about 4 miles from a Reservation. They have fry bread stands located throughout that particular reservation where they sell Navajo Tacos. In Utah and Southern Idaho they call these scones. So yummy! They are super easy to make, if I can do it, you can do it. Let's get started!

Brazilian Cheese Bread Recipe (Pão De Queijo)
This traditional Brazilian cheese bread (Pão De Queijo) is one of the easiest bread recipes I’ve ever made. If you are not familiar with this recipes, this bread is soft, fluffy and loaded with cheese. And it’s not only easy recipe but also gluten free (there is no wheat flour in this recipe).

Makes 16 bread rolls
Ingredients:
1 1/3 cups (170g) Tapioca flour
2/3 cup (160ml) Milk
1/3 cup (80ml) Oil
1 Egg, large
1/2 teaspoon Salt
2/3 cup (85g) Grated mozzarella cheese or any other cheese
1/4 cup (25g) Parmesan cheese, grated
Directions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl place tapioca flour. Set aside.
3. In a large pan place milk, oil and salt. Bring to a boil. Pour into the tapioca and stir until combined. Add egg and stir until combined. add cheeses and stir until incorporated and a sticky dough forms.
4. Shape the dough into balls and place on a baking tray lined with parchment paper. Bake for 15-20 minutes, until lightly golden and puffed.
5. Eat warm or let cool.
Notes:
• Which cheese to use for Pão De Queijo: you can use mozzarella, cheddar cheese, gruyere cheese, combination of serval cheese or any cheese that you like.
• How to serve Pão De Queijo: the best way is to eat them warm while the cheese is melted. You also can reheat them before serving.
• You can store Pão De Queijo at room temperature up to 3 days.
• To freeze them, shape into balls, place on the baking try and bring to the freezer. Once they are frozen, transfer to a ziplock bag and keep them in the freezer up to 3 months.

MINI LOAF RECIPE
4 mini loaf baking cups (or 8x8x 2 inch baking pan)
4 pan bolillio rolls
I used 2 1/2 to 3 cups of the sugar syrup
1/3 cup raisins
1/2 cup of shredded mozzarella cheese
2 tbls unsalted butter
