1 1/2 lbs Skirt Cut Steak ( I let mine Sit out for 1 -2 hours to get to room temperature)
Course Kosher Salt
2 TBSP Worcestershire Sauce
1 Tbsp Oilve oil
2 tsp chilli power
1 Tsp ground oregano
1 Tsp garlic powder
Diced onion
Fresh Cilantro
Corn tortillas

2 lbs Skirt Steak
1 orange
2 Tbsp soy sauce
2 Tbsp olive oil
1 lime
5-6 cloves garlic
1/4 cup cilantro
1 tsp cumin
2 tsp chili powder
Salt to taste

From expensive 5 stars restaurants all the way to mom and papa's this steak can be found anywhere here. But, for great reason. Extremely flavorful, tender, juicy and very delicious this steak is a total winner. On this video I share my take on this classic Miami favorite recipe steak.
HOW TO COOK CHURRASCO GRILLED (AKA SKIRT STEAK)
I cooked it for 3 minutes per side @ (400°F / 205°C) indirect heat.
Baste with searing sauce and sear in very high direct heat for 30 sec.
* INGREDIENTS * I used this amazing steak.
2 16oz skirt steaks
Salt, Pepper and Garlic to taste.
Marinate for overnight
1 Orange, 1 lime and 1 white onion.
Salsa Verde (aka Guga's Salsita)
1 tbsp White Onions
1 tbsp Red Wine Vinegar
1/4 cup Parsley
1/2 tsp Minced Garlic
1/2 Chilly Flakes
1/2 salt
1/2 pepper
1 tbsp olive oil
1/2 lime
Basting Sauce
1/4 cup Low sodium Soy Sauce
1/2 Lime Juice

Mexican Flank Steak Pinwheels - Recipe Testing -- Griddle Seared then Braised on the Grill!
These Mexican style pinwheels with flank steak combine the Weber griddle and the Weber charcoal kettle grill for one epic flavor-packed dinner! Watch as I take you through my thinking and creative process for coming up with a new recipe that I’ve never done before…
The idea was to do a Mexican pinwheel steak stuffed with chorizo, Mexican cheese, and sautéed peppers and onions. Then, sear the pinwheels on the griddle to get that nice crust. And finally, add the seared pinwheels to an aluminum steam pan with tomatoes, onions, jalapeño, beef consommé, and enchilada sauce to create a braising liquid. Put the pan on the grill or smoker at about 300 degrees F, and braise the Mexican flank steak pinwheels until cooked through and tender - it took me about 4 hours.
When your Mexican pinwheels are done, take the meat rolls out of the pan and add all of the pan drippings, vegetables, and braising liquid from the pan to a blender. Blend it all up to make an easy sauce to pour over the steak pinwheels, and serve with some Mexican rice.

Carne Asada Tacos for babe, so I guess it’s time to fire up the @WeberBBQAusNZ Genesis
Ingredients - Marinade
- Beef flank (200g per person)
- 2 tablespoons grapeseed oil
- 1 tablespoon red wine vinegar
- 2 cloves garlic, crushed
- 1/2 bunch coriander, finely cut
- Big pinch salt and 5-6 grinds of pepper
- Juice of 2 limes
Method
1. Mix all the marinade ingredients together and marinate the beef for 1-2 hours
2. Grill on a very hot grill for 3-4 minutes each side, until you reach an internal temperature of 50°C
3. Rest the meat for at least 8-10 minutes before slicing
Ingredients - Salsa
- 2 fresh jalapeños, cut in half
- Half a white onion, cut into quarters
- Three tomatillos, cut in half (use green tomatoes if you can't find tomatillos)
- Half a bunch of coriander
- 1 tablespoon grapeseed oil
- Salt to taste
- Juice of a lime
Method
1. In a bowl, place the jalapeños, onions and tomatillos, season with salt and drizzle with oil
2. Place the veg on a very hot grill for 5-6 minutes, or until you get a good char
3. Blend the cooked veg with the coriander and lime juice, season to taste

- Salsa verde
- White corn tortillas
- Pickled red onions
Method
1. Fill your white corn tortillas with the steak, salsa verde and pickled red onions
2. Enjoy!
