MEXICAN CORNBREAD - How to make SPANISH CORNBREAD Recipe

MEXICAN CORNBREAD
Preheat oven to 350 degrees F.
Lightly oil a 7 by 11 baking dish.
1-1/2 cups self-rising cornmeal, add this ingredient LAST!!
2 eggs, slightly beaten
1 cup whole buttermilk
1/2 cup vegetable oil
1/4 teaspoon salt
1 cup sharp cheddar cheese, grated
1 large onion, finely chopped
1/4 cup red bell pepper (green bell pepper maybe used), chopped
1 (8-ounce) can whole corn, drained
1 jalapeño , chopped, optional
1. In a large mixing bowl add eggs. Whisk. Add buttermilk, oil, and salt. Whisk. Stir in chopped bell peppers, onions, drained corn, and chopped jalapeño. Stir in grated cheese.
2. Add the self-rising cornmeal. Stir until you can no longer see the dry cornmeal.
3. Add to prepared baking dish!! Smooth top of batter, with back of spoon) until evenly level from corner to corner!!
4. Bake in preheat oven for 1 hour. Test with a toothpick to make sure batter in completely baked.
5. Cool 15 minutes before serving.
TIPS: Store in refrigerator, in airtight container, up to 3 days!!

Mexican Cornbread at home.
This is our version of a Mexican Cornbread. Since we were making some chili beans, we decided this would be a great pairing.
Delicious Mexican Cornbread
Mexican Cornbread
2 cup cornmeal mix (not sweet)
1 can of cream-style corn
1 cup of buttermilk
1/2 cup vegetable oil
2 lg eggs
bacon pieces (as much or as little as you like)
2 to 3 lg Jalapeños chopped
4 to 5 cups of shredded cheese
mix all ingredients together, pour in a greased 9x13 baking dish and bake in a 350° oven for 45 minutes.

Creole Cornbread Recipe - Cornbread is a staple of Cajun and Creole cuisine. So if you've never had then you're in for a real treat!
Creole Cornbread Ingredients
2 cups Cooked Rice
2 large Eggs, room temperature
1 cup Whole Milk
1 cup Yellow Cornmeal
1/2 cup chopped Onion
1 - 2 tbsp chopped Jalapeno Peppers
1/2 tsp Baking Soda
1 tsp Salt
1/4 cup Canola Oil
1 (14.5 ounces) can Cream-Style Corn
3 cups shredded Cheddar Cheese
**** Note ****
To level this Creole Cornbread up even further add these ingredients:
1 tbsp Creole Seasoning (I strongly suggest Creole Kick)
1 tsp Cumin
Small Shrimp can be added as well
2 - 3 tbsp chopped Jalapenos with seed for that bite!
