How To make Mexican Corn
2 c Frozen corn
2 tb Butter
1/4 c Diced onion
1/4 c Diced sweet green pepper
2 tb Chopped pimiento
1/2 ts Salt
1/4 ts Pepper
In saucepan, bring small amount of water to boil; add corn. Reduce heat to simmer and cook for 5-7 minutes or until tender; drain. In another saucepan, melt butter over medium heat; cook onion and green pepper for 2-3 minutes or until softened. Stir in pimiento, salt, pepper, and corn. Makes 4 servings.

Mexican Street Corn - Coctel de Elote - Mexican Food

One of my favorite street foods to eat in Mexico is the Elote's (corn) you find on the street corners. It reminds me a warm summer day walking the streets of Tijuana. It's an awesome treat to eat, sweet, spicy and savory. Once you make these you will be craving them all the time. This recipe is really simple to make.

Coctel de Elote recipe:
Ingredients:
Fresh Corn
Cotija cheese
Mayonnaise
Mexican hot sauce of your choice
Tajin or chili seasoning of your choice
Cooking Instructions:
Boil the corn for 8 minutes or grill for 4 minutes per side flipping every minute to prevent burning.
Slather the corn with mayonnaise on all sides.
Over a plate of cotija cheese spoon the cheese over the corn.
Sprinkle the chili seasoning over the corn
and finish off by drizzling hot sauce all over the corn.
Or you can cut the kernels off the corn.
Place all of the ingredients in a bowl, mix well.
Serve in a cup.
Enjoy!

Mexican-Style Street Corn
Here is what you'll need!
Mexican-Style Street Corn
Serves 3
INGREDIENTS
3 ears of corn, hulled
3 wooden skewers
¼ cup melted butter
½ cup mayo
2 cups cotija cheese
3 teaspoons chili powder
PREPARATION
Boil the corn for about 5 minutes.
Push a skewer through the middle of each ear of corn.
Drain, then brush them evenly with the melted butter.
Spread a bit of mayo all over each ear of corn.
Scoop the cotija cheese generously on the corn, making sure it covers all sides.
Sprinkle a little bit of the chili powder evenly across the corn.
Serve!
