INGREDIENTS
2 1/2 LBS Carne Ranchera (or flap steak)
black pepper
salt
1 egg
2 advocados
mix cheese
lettuce
Bone Marrow
butter
onion
FOR THE TORTA
Telera Pan / French Sub Rolls
TORTA ASSEMBLY
- Slice french sub rolls in half and butter both sides
- Place sub rolls on griddle and toast each side
-Add the guacamole
- Then add sliced meat and sautéd onion on top of cheese
-Add lettuce tomatoe
- Now remove both sides of bread from griddle and start adding desired condiments

You can make it the traditional way and smoke it, for that you won’t need the beer mixture , and you can make the coleslaw using mayo,vinagre and sugar, just top it with your homemade bbq sauce ???? this is my way and I hope you enjoy it just as much as me and my family!

4 lbs pork butt
Bolillo bread
My dry rub:
1/4 cup paprika
2 tbsp salt
2 tbsp brown sugar
2 tbsp Chile powder
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp ground cumin
1 tbsp pop black pepper
1 tbsp oregano
2 tsp basil
1 1/2 tsp ground coriander
1 1/2 tsp ground mustard
1 tsp ground cinnamon
12 oz beer
1 cup chicken broth
2 tbsp vinagre
1 lime
1/2 onion
7 garlic cloves
Cilantro
2 jalapeño or Serrano

16 oz tricolor coleslaw(shredded cabbage n carrots)
Chopped cilantro
1/2 purple onion sliced
1 chopped jalapeño or Serrano pepper
2 tbsp olive oil
2 limes
1 lemon

Torta de Carne Asada | The Mexican Cheesesteak Sandwich Americans Are Sleeping On
In this weeks recipe video I recreate a Mexican Carne Asada Torta that a drunken me once drooled over in Rosarito, Mexico at a little spot called Tortas Carbonas.
They have been making these sandwiches for 60 years, and that is for good reason. Places like Carbonas and Tortas Washmobile have an incredible product that are unique to them and unlike anything I've ever tasted in the USA. I have been thinking about this sandwich for two years, so in this video I try my best to recreate that using basic American ingredients at my home in a small American town - which is nowhere near the border.
Mexican food is hands down my favorite cultural cuisine, and it hasn't been represented so well in American culture. As a white guy trying to recreate one of the best things I had in Mexico - I hope this does the sandwich and the culture that it came from some justice. Based off my recollection and the nostalgia that my first bite triggered - it certainly does.
Shopping List for this recipe:
-Steak (I used chip steak, but would recommend skirt if you can get it.)
-Great rolls (Torta rolls will be most authentic - but any soft, flakey/crunchy round roll will do.)
-Garlic
-Onion
-Smokey Salsa (Dried ancho chiles, dried california chiles, tomato, onion, garlic, tomatillo, olive oil, honey/agave syrup, cilantro, lime juice)
-Tomato
-Avocado, lime, garlic, jalapeño (turned into guacamole)
-Fresh Cilantro
-Fresh Oregano
-Orange Juice
-1 beer (light in color - no sours or goses or anything like that.)
-low sodium soy sauce
-liquid smoke
-pickled jalapeños
-pickled red onions
-can of pinto beans
-mexican spices (cayenne, paprika, cumin, dried oregano, etc. for adding to beans while they cook)
-Oaxaca cheese (or a low moisture mozzarella if you'd prefer. You know, the square mozzarella like the one Polly-o makes. Not the fresh, round stuff.)
I dont measure anything - and neither should you. It will make your cooking much more enjoyable and allow you to get into a flow state while cooking. Add ingredients in the quantity that seems right to you - or if you're doubtful about that - just look at the quantity I added proportionally to the rest of the items.
For marinade - 1 part orange juice to 1 part beer
