You can make this recipe using chicken breast, boil for 25 mins
Ingredients:
Meat:
2 lbs beef tri tip or your choice
Garlic
Onion
4bay leave
1 tsp peppercorn
2 -3 tbsp salt (best to use 2 tbsp)
Pickled onions:
1/2 purple onion
4 jalapeños
1 lime
Jalapeño juice
Pinch salt
Black pepper oregano
Vinaigrette dressing: double the oil and vinagre if you want more dressing ????
6 tbsp olive oil
2 tbsp apple cider vinagre
1 lime
1 minced garlic
1 tsp oregano
1 tsp salt
1/2 tsp black pepper
All of your favorite vegetables I used:
1/2 head of lettuce
4 roma tomatoes
2 serranos
Chopped cilantro
10 radishes chopped
Avocados
Tostadas
Queso fresco

Mexican Chipotle Steak Salad - A Quick and Easy Healthy Salad Idea.
This super healthy chipotle steak salad is great for a low carb lunch or dinner with plenty of fresh vegetables and oodles of flavour. Cucumber, avocado, tomato & lettuce with a zingy dressing and chipotle marinated steak. What more do you need?
Ingredients
1 tsp Chipotle Chilli Paste
350g (12oz) sirloin steak
1 tbsp. fish sauce
2 tsp sesame oil
juice of 1 lime
1 lemongrass stalk, tender white part only, finely chopped
¼ cucumber, finely chopped
2 spring onions, thinly sliced
1 baby gem lettuce, torn into pieces
1 avocado, flesh sliced thinly
4 cherry tomatoes, quartered
a handful of coriander leaves, roughly chopped
a handful of mint leaves, roughly chopped
a handful of peanuts, crushed
salt and freshly ground black pepper
How To Make
Rub the chipotle chilli paste into the steak and leave for 15 minutes.
In a bowl, make the dressing by mixing together the fish sauce, sesame oil, lime juice and thinly sliced lemon grass. Add the cucumber and spring onions and leave aside.
Meanwhile, separate all the lettuce leaves and slice the bigger leaves into bite-sized chunks.
Heat a griddle pan until smoking hot.
Add the steak and leave without moving it for 2 minutes. Flip and repeat for medium rare, or a little longer if you like your steak well done.
Leave to rest for 5 minutes before slicing thinly.
Meanwhile, add the avocado, tomatoes, lettuce, coriander and mint to the dressing and mix well.
Place the dressed salad in a bowl, season with salt and pepper, then top with steak and sprinkle with crushed peanuts.

lemon juice 1 tbsp
salt 1/2 tsp
black pepper powder 1/2 tsp
Tortilla
mozzarella & cheddar cheese grated

Mexican Beef Salad
*Ingredients*
baby corn, beef, beef tenderloin, brown sugar, cherry tomatoes, coffee, lettuce, lime, olive oil, pepper, red onion, salt, sweet corn, yogurt, meat
*Recipe*
Add the salt, coffee, brown sugar, and pepper in a bowl.
Mix and use them to coat the beef.
Heat a skillet and add 1 tablespoon of olive oil. Start frying the beef.
Fry for about 3 minutes per side. Let it rest and slice it.
Chop the lettuce and start preparing the salad. Also slice the onion.
Separately, heat another skillet and add the sweet corn, baby corn, cherry tomatoes, and coriander.
Stir and leave them on heat for about 1 minute.
In a large bowl, add the salad, cooked veggies, and red onion.
Season with olive oil, lime juice, and salt.
Mix all together.
Serve with beef slices and 1 tablespoon of yogurt as a dressing.
