How To make Mexican Octopus Salad
2 lb Octopus, cleaned, cooked;
Cut in 1" pieces or smaller 1 sm Red bell pepper, seeded &
-sliced in bite sized strips 3/4 c Corn, kernel
9 oz Kidney beans; drained
Romaine lettuce leaves Salt/pepper
CHILE DRESSING:
1/2 c Oil
1/3 c Lemon juice
1 1/2 ts Dry oregano
1 1/2 ts Ground cumin
1 Chile serrano;
-seeded & minced Cook octopus in boiling water until opaque (not too long, probably less than 1 min.). Drain, rinse in cold water and pat dry. (Remove skin if desired). Cut to size. Prepare Chile Dressing: Mix salad oil, lemon juice, dry oregano and ground cumin and one or two jalapeno or serrano chiles, seeded and minced. Mix octopus, dressing, bell peppers, corn and beans. Today im going do give you THE BEST OCTOPUS RECIPE YOU WILL EVER NEED. Pus i will be sharing restaurant tips for the perfect cooked octopus every single time.
List of ingredients:
TO COOK THE OCTOPUS:
01 octopus about 1k and 900 grams;
01 onion;
04 garlic;
03 BAY LEAF;
01 tea spoon of white pepper;
06 cloves.( Cook for 1 hour)
For baking the potato:
12 potato; Salt ( bake between 30 and 40 minutes)
For baking the octopus and the potato:
The cooked octopus;
The baked potato;
03 bay leaf;
05 garlic;
200 ml of olive oil.
Put in pre- heat oven for 20 minutes.

Ingredients:
2 to 3 lbs octopus
3 plus cloves garlic
1 bay leaf
10 peppercorns
Cork from a wine bottle
Extra virgin olive oil
1 juice of a lemon
1/2 bunch parsley chopped
Fresh cracked black pepper
Salt to taste
Directions;
In a large pot filled with water, add bay leaf, peppercorns, and cork, and then start boiling.
Add the octopus and cook for about 40 minutes or until tender. Test by piercing with a fork.
Remove and slice each tentacle of the body and set aside.
Chop parsley and garlic, add olive oil, and use some to coat the octopus pieces.
Grill for a few minutes on each side until nicely charred.
Add lemon juice to parsley, oil, and garlic. Whisk to thicken. Drizzle on a plate, add octopus and drizzle rest over it. Add salt and fresh cracked pepper.

I have been planning this week's episode since I started making these #FOGOlife videos on Youtube. But I have shied away worried that it's difficult to do, easy to mess up, and just simply being intimidated by it.
At the same time, I have always greatly enjoyed eating Octopus in restaurants, so I had to finally learn how to do it. And? It's incredible, very satisfying, delicious, and it's not as difficult or complicated as a lot of stories make it out to be.
