2 Egg whites
1/4 c Sugar
1/2 c Butter
ds Salt 1 ts Vanilla extract
3/4 c Sugar
2 Egg yolks
1 1/2 c Flour; sifted
1 ts Baking powder
1/3 c Milk
1 1/2 c Blueberries
Recipe by: Copper Light In Port Clyde, Maine Pat beat the egg whites until stiff. Add 1/4 C sugar. In a separate bowl cream the butter, add salt and vanilla, add the remaining sugar and egg yolks. Beat until light and fluffy. mix the flour & baking powder, add alternately with the milk to the creamed mixture. Fold in the egg white mixture and the blueberries. Grease a 8 x 8 inch pan. Pour in the batter and sprinkle the top with granulated sugar. Bake in a 350 oven for about 50 minutes or until it tests done. Place the pan in the upper 1/3 of the oven Serves 9 -----

As always, there are a few adjustments you can make to the recipe. I love blueberries, but you can use blackberries, cranberries, etc. The batter will go with just about any berry. You can even make the cookies without berries.
The recipe uses granulated sugar but brown sugar can be used as well. For that matter, you can use confectioner's sugar. I have to mention that the vanilla extract is options too.

This cake is sooo light and moist and absolutely bursting with blueberry flavor!!!! It is one of the most delicious cakes you will ever put in your mouth!!!
Recipe:
Cake
1/2 CUP SHORTENING,1/2 CUP BUTTER
2 CUPS SUGAR
4 EGGS
2 2/3 CUPS SIFTED CAKE FLOUR (I USE WHITE LILY ALL PURPOSE)
2 TSP. BAKING POWDER
1/2 TSP. SALT
1 CUP MILK
1 TSP. VANILLA
CREAM SHORTENING, ADD SUGAR GRADUALLY. CREAM UNTIL MIXTURE IS VERY FLUFFY. ADD EGGS ONE AT A TIME, BEATING WELL AFTER EACH ADDITION. SIFT FLOUR, BAKING POWDER AND SALT TOGETHER, ADD TO MIXTURE ALTERNATELY WITH MILK. ADD FLAVORINGS. SPREAD EQUALLY INTO 3 OR 4 9 PANS. FOR THIS RECIPE I WOULD RECOMMEND USING JUST 3 PANS. 4 PANS OF CAKE, AFTER FROSTING, WILL MAKE THE CAKE TOO TALL TO FIT INTO A CAKE SERVER.

1-8 OZ CONTAINER COOL WHIP
1/2 CUP CONFECTIONERS SUGAR
1 CAN BLUEBERRY PIE FILLING
MIX CREAM CHEESE TILL SMOOTH. ADD SUGAR AND BLEND WELL. FOLD IN COOL WHIP AND COMBINE THOROUGHLY.
APPLY TO CAKE AND TOP WITH BLUEBERRY PIE FILLING (I DOUBLED MY FROSTING RECIPE FOR MY CAKE)
