Sweet Potato Banana Nut Muffins

Sweet Potato Banana Nut Muffin
Yield: 12 servings

Ingredients:
• 1/2 cup sweet potato puree
• 1 banana, mashed (about 1/3 cup)
• 1/3 cup nut butter
• 3 eggs
• 3 tablespoons maple syrup or sugar
• 1 teaspoon vanilla
• 2/3 cup whole wheat flour
• 1 tsp ground cinnamon
• 1 tsp baking soda
• 1/3 cup chopped nuts, optional
• ½ cup optional add-ins – chocolate chips, dried cranberries, raisins or coconut flakes.
Directions:
1. Preheat oven to 350°F. Lin muffin tin with paper liners or grease with oil.
2. In a bowl combine sweet potato, banana and almond butter and stir until smooth.
3. Stir in eggs, syrup or sugar and vanilla and continue to stir.
4. Mix in flour, cinnamon, baking soda and nuts (optional).
5. Bake 16-18 minutes.

In this video, I'm making the best muffins with boiled and mashed sweet potatoes. These muffins are buttery and it melts in your mouth. I'm using my favorite chocolate bar; which is the Ritter sports winter edition - caramelized almonds in this recipe. to The fragrance of sweet potatoes and the chocolates combined will entice your senses for sure.
Although these muffins look simple, I must say, this was one of my most favorite all time recipes that I've posted on this channel. Do give it a try and hope you enjoy!

Ingredients:
- 2 eggs
- 130 grams of sugar (2/3 cup)
- 1/4 teaspoon salt
- 1 teaspoon vanilla sugar
- 50 grams of melted butter
- 200 grams of cottage cheese
- 50 grams of raisins
- 160 grams of flour (1+1/4 cups)
- 1 teaspoon baking powder
Bake in preheated 350°F (180°C) oven / 25 minutes.
