3 pounds beef chuck roast or round steak
Vegetable oil 1 cup chopped onion
1/2 cup chopped celery
2 cups beef broth or bouillon
1 clove garlic -- minced
1 teaspoon salt
3/4 cup ketchup
4 tablespoons brown sugar
2 tablespoons vinegar
1 teaspoon dry mustard
1/2 teaspoon chili powder
3 drops hot pepper sauce
1 bay leaf
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1 teaspoon Worcestershire sauce

It's hearty and filling - important requirements when you're feeding a bunch of cowboys!" - Betty Sitzman In a Dutch oven, brown beef in oil on both sides. Add onion and celery when meat is almost browned. Add broth; cover and simmer 3-4 hours or until meat is tender. Remove meat; cool and shred. Drain vegetables, reserving 1 1/2 cups broth. Skim off any fat. Return the meat, vegetables and broth to Dutch oven; add the remaining ingredients. Simmer until heated through. This keeps well in a slow cooker on low heat. Sauce -
100ml (100g) - Low Sodium Soy Sauce
2 Tbsp (40ml) - Rice Vinegar
70g (2.4oz) - Brown Sugar
3 tsp (15ml) - Toasted Sesame Oil
5 - Cloves Garlic, Minced
15g (0.5oz) - Ginger, Minced
1/2 tsp (1.5g) - Chilli Flakes (Optional)
Seasoning To Taste
Garnish
1 - Spring Onion, Sliced (Optional)

300g (1 1/2 Cups) - Jasmine Rice, Washed
500g (2 Cups) - Cold Water

Always freeze before 3 days if you know this won’t be eaten before then. I said 5 days in the video but disregard that and stick to 3.

THE BEST GROUND BEEF NACHOS - EASY QUESO ROTEL DIP
Nachos are always a comfort food - who doesn't love cheese? Well I'm here to share a Nachos recipe made with ground beef, velveeta, and Rotel that you NEED to try! Can also be used more specifically as a Rotel Dip. These are the perfect snack or appetizer for any party or get together. I hope you enjoy!
INGREDIENTS:
- Garlic Salt to Season
- 1 TBSP of oil to cook ground beef
- 1 lb of ground beef
- 16 oz block of Velveeta cheese (Original)
- Your choice of tortilla chips
- One 10 oz can of Rotel (I used the Mild version)
- 1/2 cup of water
- OPTIONAL: Pico de Gallo or Guacamole
DIRECTIONS:
- Begin by cooking ground beef fully, set aside once fully cooked
- Cut Velveeta cheese into small squares (for easier melting)
- In a larger pot or saucepan, pour half of the cheese, the entire Rotel can, and 1/4 cup of water and cook over a Low heat. Stir continuously.
- Once most of the cheese is melted, pour the rest of the cheese in and melt completely.
- After all cheese is melted, add in 1 cup of cooked Ground Beef and 1/4 cup of water. Mix in completely.
