Strawberry Rhubarb Pie
This is my Papaw's favorite Pie. I make this for him as often as I can. You have to have a taste for Rhubarb. It is very very sour but Oh So Good!!! It needs a lot of Sugar.... The Rhubarb mixed with the Strawberries is pure Heaven!! ha ha
Here is the Recipe. It is not exactly the way I made it. I add a little more Sugar and Strawberries... :)
Strawberry Rhubarb Pie Recipe

Ingredients
3 cups rhubarb stalks cut into 1/2 inch pieces (Trim outside stringy layer of large rhubarb stalks; make sure to trim away any and discard of the leaves which are poisonous; trim ends.)
1 cup strawberries, stemmed and sliced
1 cup sugar
3 Tablespoons of quick cooking tapioca
1/4 teaspoon of salt
1 teaspoon of grated orange peel
Unbaked pastry for two-crust 9 inch pie
(If making a 10 inch pie, or just want more filling, use 4.5 cups of rhubarb, 1.5 cups strawberries, and 1 1/4 cup of sugar)
Method
1 Preheat oven to 400°F. Mix the rhubarb and the strawberries with the sugar, tapioca, salt, and orange rind. Let sit for 10 minutes.
2 Turn into a pastry lined pan. Top with the pastry, trim the edge, and crimp the top and bottom edges together. Cut slits in the top for the steam to escape.
3 Bake at 400°F for 20 minutes, reduce heat to 350°F, and bake an additional 30-40 minutes longer (40 to 50 minutes longer if doing a 10-inch pie). Cool on a rack.
Serve warm or cold. If you do cool to room temperature, the juices will have more time to thicken.

This recipe is an easy and delicious way to use fresh strawberries. Its perfect for anytime of the year, but its best when strawberries are at peak season. You can use a pre-made pie shell or your own favorite pie crust recipe. I decided to use the Fresh Strawberry Pie from Flying saucer Pie Co. as inspiration for this recipe. If you live in the Greater Houston, Texas area or just visiting, you should definitely make your way to the Flying Saucer Pie Co. shop for a fresh slice.
INGREDIENTS
1 1/2 lbs Fresh Strawberries
9 inch deep dish pie shell (from scratch or pre-made)
GLAZE RECIPE
3/4 cup sugar
3 tbls corn starch
1 1/2 cups water
2 to 3 tbls Strawberry Jello
PIE CRUST
1 3/4 cups all purpose flour
1 tbls sugar
1/2 tsp salt
1/2 cup shortening
3 to 4 tbls ice cold water
WHIPPED CREAM
1 1/2 cups heavy cream
2 tbls confectioner's sugar
**Canned Whipped cream or Cool Whip work as well

So rich. So delicious. This Strawberry Pie recipe by @OutdoorsAllie comes with a bear lard crust—and trust us, it's delicious.
Strawberry Pie with Bear Lard Crust
For the pie dough:
2 1/4 cups all purpose flour
1 teaspoon kosher salt
1 tablespoon granulated sugar
1/2 cup very cold unsalted butter, grated
1/2 cup very cold rendered bear fat
1/2 cup ice water (start with 1/3 cup and add more as needed), strained
For the filling:
3 lbs Strawberries, halved
3/4 cup granulated sugar
1 lemon, juiced
1 teaspoon Cointreau
3 tablespoons cornstarch
1/3 cup Water
1 teaspoon Vanilla Extract
1. In a large bowl, combine the flour, salt, and sugar. Add the cold butter and lard. Use your hands to mix, breaking apart the butter and lard until they become small, gravel like balls coated in flour.
2. Add the ice water and lightly mix with your hands until the dough just starts to come together
3. On a lightly floured work surface, use a rolling pin to roll the dough into a long sheet. Using a bench scraper, fold the sheet onto itself. Repeat four or five times, until the dough starts to come together. Be careful not to overwork the dough.
4. Wrap the dough in plastic wrap and place it in the fridge to rest for 20 minutes.
5. On a lightly floured surface, roll the dough so it’s about 2 inches bigger than the cast iron pan on all sides. Gently place the sheet of dough over and into the pie plate.
6. In a large bowl, combine the cut strawberries, sugar, lemon juice, cointreau, cornstarch, water and vanilla extract. Stir until well combined.
7. Preheat your Oklahoma Joe’s Bronco Grill to 350 degrees F using charcoal briquettes.
8. In a large saucepan, bring half of the strawberries and all of the liquid to a boil, then immediately reduce to a simmer. Simmer until the mixture begins to thicken, about 3 minutes. Remove from the heat and set aside with remaining strawberries.
9. Pour the strawberry filling into the pie dough crust and place on the grill for 40 to 50 minutes until the crust is golden brown.
10. Allow the pie to cool for 2 - 3 hours or overnight. Slice and serve with fresh whipped cream.

VALENTINE'S TRIFLE: Ridiculously Easy to Make and So Delicious, Too
I've always wanted to make a trifle, and with Valentine's Day coming up, this was the perfect time. Actually, two other things happened recently that also pointed to me making this Valentine's Trifle: One, I found a trifle dish at the thrift store. And Two, one of my sisters showed me the easiest way to make an instant pudding/parfait using only three ingredients. It's so delicious, even if you don't make a trifle, I hope you try it.
You can make a trifle as elaborate and as beautiful as you'd like. All it takes is a white cake of your choice, some fresh fruit, and a pudding or custard. There's no real recipe to follow. You just layer your ingredients in a glass dish, or even individual glasses, and enjoy! That said, here's what you need to make my sister's pudding.
Instant Pudding/Parfait
1 tub of Cool Whip
1 can sweetened condensed milk
1 can pie filling of your choice (I used strawberry in this recipe)
Just mix them all together and that's it! It's heavenly.
