INGREDIENTS WITH GRAM AMOUNTS
¼ (54 grams) cup extra virgin olive oil
4 (112 grams) ounces pancetta - diced
1 large onion - diced
4 ribs celery - diced
3 medium carrots - diced
¼ teaspoon crushed red pepper flakes
1 pound (454 grams) dried cannellini beans soaked overnight, or 3 16-ounce cans
6 cups (1440 grams) low sodium chicken stock plus more for thinning
1 head garlic roasted
3 sprigs rosemary
1 small Parmigiano Reggiano rind (optional)
1 large bay leaf
salt and pepper to taste

It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.

Easy Rosemary Garlic White Bean Soup
This incredibly easy Rosemary Garlic White Bean Soup takes only eight simple ingredients to deliver a bowl full of rich, bold flavor. FULL RECIPE BELOW.

INGREDIENTS
- 2 Tbsp olive oil
- 4 cloves garlic
- 3 15 oz. cans cannellini beans
- 2 cups vegetable (or chicken) broth
- 1/2 tsp dried rosemary
- 1/4 tsp dried thyme
- 1 pinch crushed red pepper
- freshly cracked pepper to taste
INSTRUCTIONS
1. Before you begin, pour one of the cans of cannellini beans (with its liquid) into a blender and purée until smooth. Drain the other two cans of beans.
2. Mince the garlic and add it to a soup pot with the olive oil. Sauté the garlic over medium for about one minute, or just until the garlic is very fragrant.
3. Add the puréed cannellini beans, the other two cans of drained beans, broth, rosemary, thyme, crushed red pepper, and some freshly cracked pepper. Stir to combine.
4. Place a lid on the pot, turn the heat up to medium-high, and bring the soup to a boil. Once boiling, turn the heat down to medium low, remove the lid, and allow it to simmer for 15 minutes, stirring occasionally.
5. Smash the beans slightly to thicken the soup even more. Taste the soup and add salt if needed (I did not add any, this will depend on the salt content of your broth). Serve hot, with crusty bread for dipping!

Quick & Easy!! Lemony White Bean & Chicken Soup

Ingredients
1/4 cup olive oil
1 onion, finely chopped
2 carrots, chopped
2 celery stalks, diced or a teaspoon of celery seeds
5 garlic cloves, grated
1 and 1/2 pounds boneless skinless chicken thighs
2 quarts chicken broth
salt, to taste
1/2 teaspoon freshly cracked black pepper
2 (15-oz) cans white beans (Great Norther, canellini, white kidney, or chickpeas) rinsed and drained
5-6 oz baby spinach or kale leaves
1 teaspoon dried dill
1/4 cup (or more) fresh lemon juice
1-2 tablespoons finely chopped parsley
lemon wedges for garnish
bread, feta cheese, and olives for serving
Instructions
Place the oliv eoil, onion, carrot, and celery in a soup pot and season with apinch of salt. Cook over medium heat until soft and golden. About 15 minutes.
Meanwhile, cook the chicken. Drizzle 1-2 tablespoons of olive oil over the chicken and season both sides with salt and black pepper. Cook the chicken either ina. preheated 425 ‡F oven for 25 minutes or in the air fryer set to 400 °F for about 15 minutes. Chop or shred the cooked cooled chicken and set aside.
Add the beans, celery seeds, chicken, and dill to the pot. Season with salt and pepper and add the broth. Simmer for 20 minutes.
Add the spinach leaves, lemon juice, and parsley. Taste and adjust seasoning if needed. Simmer for 5 minutes more.
Serve with toasted bread, feta, and olives.

Notes
Freezer Instructions: The prepared soup can be cooled and then transfered to freezer-safe containers. It will keep fresh frozen up to 3 months. Thaw overnight in the refrigerator and simmer until piping hot.
