I could literally eat this salad every day! it’s that good. The perfect light summer meal.
—Chicken marinade—
2 chicken breasts
1/2 cup olive oil
1/4 cup lemon juice
1/2 tablespoon salt
1/2 teaspoon garlic powder or fresh garlic
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon chili flakes
1/2 teaspoon black pepper
1/2 teaspoon oregano
1/4 cup fresh chopped parsley or dried
1 tablespoon lemon zest
:
—Vinaigrette—
The juice of 1 lemon
1 clove garlic
1/4 cup extra virgin olive oil
2 tablespoons red vinegar (white or apple cider)
1/4 teaspoon oregano
1/4 teaspoon salt
1/4 black pepper
:
—The rest of the Salad Ingredients—
Lettuce
Hummus
Cucumber
Tomatoes
Kalamata olives
Feta cheese
Pickled red onions
Parsley for garnish
:
1. Marinate the chicken- slice each chicken breast horizontally into 2 even pieces . In a bowl mix together the ingredients for the marinade, olive oil, lemon juice, lemon zest, parsley and all the spices. Put the chicken in the marinade make sure it’s covering and let it marinate for a half an hour or overnight.
2. Cook the chicken in a nonstick skillet on medium to high heat for about 5 minutes per side or until the internal temperature is 165°f. Don’t forget to pour the marinade over the chicken as they are cooking. Once done remove from pan and let the chicken rest for 5 minutes before cutting.
3. Make the vinaigrette- mix together all the ingredients for the vinaigrette and set aside.
4. Cut the chicken into bite size pieces along with the rest of the vegetables and ingredients that go in the salad.
5. Start assembling the salad put everything in a large bowl. The lettuce first then the rest of the ingredients hummus, cucumber, tomatoes, olives, chicken, feta, pickled onions garnish with parsley, then drizzle the vinaigrette on top and enjoy!

2-POUNDS CHICKEN BREAST
2-TBSP SOY SAUCE
2-TBSP OLIVE OIL
1-TBSP CHICKEN POWDER OPTIONAL OR 1-TBSP SUGAR
1- LEMON AND SOME LEMON ZEST
1/2-TBSP BLACK PEPPER
1-TBSP GARLIC POWDER
1/2-TBSP DRIED OREGANO
1/2-TBSP PAPRIKA
MIX THEM ALL TOGETHER AND MARINATE IT OVERNIGHT.
FOR SALAD INGREDIENTS:
3/4- CUP CHICKEN BROTH
1-PACKAGE COUSCOUS
COOK COUSCOUS FOLLOW THE BOX INSTRUCTIONS, ALONG WITH THE CHICKEN BROTH, OR WATER
1-CAN GARBANZOS DRAINED
1-CAN BLACK OLIVE SLICED DRAINED
1 1/2 CUP- CHERRY TOMATOES CUT IN HALF
1-SMALL ZUCCHINI CUT IN CUBES
1-LEMON JUICE
1/2-CUP BELL PEPPERS
1/4-CUP FRESH BASIL SLICED
1/2-TSP BLACK PEPPER
SALT TO TASTE
HEAT THE PAN,ADD OIL,SAUTE GARLIC UNTIL BROWN,ADD GARBANZOS COOK IT FOR 2 MINUTES,ADD ZUCCHINI,BLACK OLIVES,BELL PEPPERS, FOLLOW THE SALT TO TASTE BLACK PEPPERS MIX THEM WELL COOK ABOUT 2 MINUTES.REMOVED FROM THE FIRE,AND MIX ALL THE VEGETABLES AND COUSCOUS TOGETHER,ADD LEMON JUICE AND BASIL MIX THEM WELL AND SET ASIDE WHILE WAITING THE CHICKEN BE COOK. YOU CAN GRILL THE CHICKEN, OR BAKE IT FOR 400 DEGREES ABOUT 10 MINUTES OR UNTIL THE CHICKEN IS COOK. MAKE SURE DON'T OVER COOK THE CHICKEN. WHEN CHICKEN IS DONE, ARRANGE THEM TO YOUR FAVORITE PLATE AND SERVE.

Ingredients
Chicken Fillets – 3
Garlic Cloves – 3
Dijon Mustard – 1 Tablespoon
Dried Mixed Herbs – 1 Tablespoon
Honey – 1 Tablespoon
Olive Oil – 2 Tablespoon
Salt – 1 Teaspoon
Black Pepper Powder – 1 Teaspoon
Baby Gem Lettuce – 8-10 leaves
Red Onion – ½
Cucumber – ¼
Black Olives – 10 nos
Red Pepper - 1
Feta Cheese – 50 gms
Sun-Dried Tomatoes – 2 nos
For Salad Dressing:
Honey – 1 Tablespoon
Dijon Mustard – ½ Tablespoon
Lemon – ½
Mayonnaise – 2 Tablespoon
Olive Oil – 2 Tablespoon
Method
Score the Chicken Fillets
Marinating: In a bowl, add minced garlic, olive oil, salt, black pepper powder, dried mixed herbs, Dijon mustard, honey and mix well.
Then add the chicken fillets and coat well. Leave it in the fridge for an hour.
Heat a non-stick pan and add olive oil. When the oil is hot add the chicken fillet. Do not turn the fillet immediately and wait until it has turned golden brown on one side. Once it has cooked on one side turn it over and cook until the chicken is fully done.
Dressing: Mix all dressing ingredients well. Olive oil, honey, Dijon mustard, mayonnaise and lemon juice. Let it combine fully.
In a large bowl, add gem lettuce, red onions, tomatoes, feta cheese, red pepper, cucumber, olives and sun-dried tomatoes. Add 2-3 tablespoons of salad dressing or as required and toss the salad.
Assembling the dish:
On a plate place some of the salad. You can add croutons if you like. Then keep the grilled chicken on the salad and garnish with a herb of your choice.
