Mediterranean Baked Chicken Dinner (Lemon Garlic Chicken Potato Bake)
Mediterranean Baked Chicken Dinner – this is a midweek chicken dinner idea that’s one of those “throw it all in a pan” recipes with high returns for minimal effort. With chicken, potatoes, onion and cherry tomatoes, you’ll love how everything sucks up the tasty Mediterranean Lemon Garlic Sauce!

Ingredients
For the seasoning
• 1/2 tsp thyme
• 1 tsp oregano
• 1 tsp ground black pepper
• 1 tsp ground cumin
• 1 tsp garlic powder
• 1 tsp Salt
• 1/2 tsp paprika
• 1/2 tsp turmeric powder
To marinate the chicken
• 2 chicken breast, sliced (gives you 4 pieces)
• 2 tsp lemon juice
• 2 tsp oil
• 4 tsp of the seasoning
To make chicken and rice
• 2 tsp oil
• 1 onion, finely chopped
• 1 tsp garlic, finely chopped
• 1 cup rice (rinsed and soaked in water for 30 minutes)
• 2 and 1/4 cups of chicken broth
• 1 bay leaf
• 1-inch cinnamon
• 1 tsp lemon juice
• 1/2 cup frozen peas
Step-by-step recipe
Preparations for making chicken rice
1. Prepare the seasoning by combining the ingredients mentioned in the seasoning. Keep it aside.
2. Marinate the chicken with 2-3 tsp of the seasoning, lemon juice, and oil. Keep it aside for 30 minutes.
Making Mediterranean chicken rice
1. Heat 2 tsp oil over medium heat.
2. Place the marinated chicken in the heated pan. Fry it for 2-3 minutes on each side. The chicken need not be fully cooked. Remove it to a plate.
3. Add onion and saute until translucent.
4. Add garlic. Cook for 30 seconds.
5. Add rice and 2 tsp of the seasoning. Saute it for a minute.
6. Add chicken broth, bay leaf, cinnamon, and lemon juice. Gently scrape the tiny bits sticking to the bottom of the pan.
7. Let the broth come to a boil.
8. Add peas.
9. Place the chicken back into the pan. Reduce the heat to low. Cook for 15-20 minutes or until the water is absorbed by the rice.
10. Once cooked, keep it covered for 10 minutes. Fluff the rice with a fork. Garnish with coriander leaves.
11. Mediterranean Chicken and Rice is ready to serve. Serve with salad on the side.

This CREAMY TUSCAN CHICKEN is a wow-worthy dinner recipe with Mediterranean flair!
This creamy Tuscan chicken recipe is a dinner recipe winner! Juicy chicken breasts are seasoned with Italian spices and seared until golden, then simmered in the most luxurious cream sauce filled with parmesan cheese, sun-dried tomatoes, onions and plenty of spinach.
It’s a spin on a classic Italian Florentine sauce, which is made from white wine, cream, and spinach. Then it was given a Tuscan twist by adding garlic and sun-dried tomatoes to the warm cream and spinach base. But what really popularized this dish (at least in America) was Olive Garden’s Tuscan Garlic Chicken, a dish with a similar flavor profile.
Either way, I’m glad this Tuscan chicken became a trend because it’s literally the best thing ever. Especially when you’re craving something rich and cheesy, with a Mediterranean flair. It's an (almost) 30-minute, one-pan meal that I know you're gonna love.
