Cucumber 1 Cup
Cherry Tomato 1/2 Cup
Mixed Bell Pepper 1/4 Cup
Olive 1/4 Cup

Dressing
For Dressing:
Garlic Clove 1
Lemon Juice 1 Tbsp
Honey 1 Tbsp

INGREDIENTS:
???? Extra virgin olive oil (I used Early Harvest Greek EVOO)
???? 3 ½ cups cooked chickpeas (or 2 15-ounce cans chickpeas)
???? ½ green bell pepper, cored and chopped
???? 1 jalapeno, finely chopped (optional)
???? 2 ½ cups grape tomatoes (or cherry tomatoes)
???? 3-5 green onions, both white and green parts, chopped
???? ½ cup sun-dried tomatoes
???? ⅓ cup pitted Kalamata olives
???? ¼ cup pitted green olives
???? ½ cup freshly chopped parsley leaves
???? ½ cup freshly chopped mint or basil leaves
For Dressing
???? ¼ cup Early Harvest Greek extra virgin olive oil
???? 2 tbsp white wine vinegar
???? 2 tbsp lemon juice
???? 1 garlic clove, minced
???? Salt and black pepper, a generous pinch to your taste
???? 1 tsp ground sumac
???? ½ tsp Aleppo pepper
???? ¼ to ½ teaspoon crushed red pepper (optional)

Mediterranean Chickpea Salad is light and refreshing and uses a quick vinegar dressing. Whip this up in under 15 minutes and enjoy this healthy lunch or side all week long!

✅Ingredients
Salad:
• 30 ounces canned chickpeas, drained and rinsed
• 1 pint red grape or cherry tomatoes, halved or quartered
• 1 English cucumber, diced
• 1 green bell pepper, diced
• 1 small red onion, thinly sliced
• ½ cup sliced kalamata olives
• ½ cup crumbled feta cheese
• 2 tablespoons freshly chopped basil
• 2 tablespoons freshly chopped mint
Dressing:
• 2 tablespoons honey
• 3 tablespoons extra virgin olive oil
• 2 tablespoons lemon juice
• 2 tablespoons white wine vinegar
• ¼ teaspoon salt
• ¼ teaspoon black pepper
✅Instructions
1️⃣ In a large mixing bowl, toss together chickpeas, tomato, cucumber, bell pepper, red onion, olives, feta, basil, and mint.
2️⃣ For the dressing, pour honey into a microwave-safe mixing bowl. Microwave 10-15 seconds to liquify honey. Whisk in olive oil, lemon juice, vinegar, salt, and pepper.
3️⃣ Pour dressing over chickpea salad. Toss to combine. Refrigerate until ready to serve.

MEDITERRANEAN SALAD RECIPE
3 cups arugula washed and stems removed
2 tbsp capers
2 tbsp crumbled feta cheese (or nutritional yeast if vegan)
1/2 cup garbanzo beans
1/4 cup chopped walnuts
For carrots:
1 cup carrots, julienne cut
1 tsp paprika
1 tbsp olive oil
1 tsp cumin
1 tsp onion powder
Salt and pepper to taste
Tahini Dressing:
2 tbsp tahini (Middle Eastern sesame paste)
2 tbsp lemon juice
3 tbsp olive oil
1 tbsp water (to thin out, you can use more if you wish)
2 tbsp honey
¼ teaspoon salt
1 tsp dried mint or 1 tbsp chopped fresh mint
Preheat the oven to 400 degrees. Combine the carrots, chickpeas, olive oil, cumin, paprika, onion powder, salt and pepper to taste and spread on a baking sheet. Roast for 20 minutes until browned and tender. Meanwhile,prepare the tahini dressing, by placing all the ingredients (tahini through mint) in a blender and blend to combine. In a large bowl add the arugula, capers, and walnuts. Once baked, add the carrots and chickpeas. Toss to combine with the tahini dressing. Sprinkle the salad with feta cheese and serve immediately.
