Mediterranean Chickpea Salad is light and refreshing and uses a quick vinegar dressing. Whip this up in under 15 minutes and enjoy this healthy lunch or side all week long!

✅Ingredients
Salad:
• 30 ounces canned chickpeas, drained and rinsed
• 1 pint red grape or cherry tomatoes, halved or quartered
• 1 English cucumber, diced
• 1 green bell pepper, diced
• 1 small red onion, thinly sliced
• ½ cup sliced kalamata olives
• ½ cup crumbled feta cheese
• 2 tablespoons freshly chopped basil
• 2 tablespoons freshly chopped mint
Dressing:
• 2 tablespoons honey
• 3 tablespoons extra virgin olive oil
• 2 tablespoons lemon juice
• 2 tablespoons white wine vinegar
• ¼ teaspoon salt
• ¼ teaspoon black pepper
✅Instructions
1️⃣ In a large mixing bowl, toss together chickpeas, tomato, cucumber, bell pepper, red onion, olives, feta, basil, and mint.
2️⃣ For the dressing, pour honey into a microwave-safe mixing bowl. Microwave 10-15 seconds to liquify honey. Whisk in olive oil, lemon juice, vinegar, salt, and pepper.
3️⃣ Pour dressing over chickpea salad. Toss to combine. Refrigerate until ready to serve.

INGREDIENTS
3-4 Persian cucumbers
2 cups cherry tomatoes
1 cup diced feta cheese
15oz can of garbanzo beans, drained, rinsed and skins removed
1 cup green or black olives, pitted (my favorite is Kalamata!)
4 cups baby spinach
1/2 small diced red onion
1 cup fresh herbs (parsley, mint, basil)
DRESSING
2T freshly squeezed lemon juice
2T white wine vinegar
2T honey
3T extra virgin olive oil
½ t salt, ¼ t pepper

It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.

Makes about 8 servings
1 pound (500g) bow-tie pasta (farfalle)
3.5 oz (100g) baby spinach leaves , washed and dried
10 oz (300g) cherry tomatoes , cut into halves or quarters
7 oz (200g) cucumber , sliced in quarters
2 medium red peppers , sliced
1 ripe avocado
1/2 red onion , cut into thin slices
6 oz (170g) black olives , pitted, drained and sliced
7 oz (200g) feta cheese , diced
Salt and pepper to taste
Salad Dressing
1/2 cup (110g) extra virgin olive oil
2 tbsp (30ml) lemon juice
3 tbsp (45ml) red wine vinegar
1 tsp (5g) mustard
1 tbsp (15g) sugar
2-3 tbsp fresh parsley , finely chopped
3 garlic cloves , minced
2 tsp dried oregano
2 tsp dried basil
1 tsp (5g) salt
freshly ground black pepper

CLASSIC (but HEALTHIER) CAESAR DRESSING
...when you swap out half the mayo for Greek yogurt and eliminate the egg yolk!
2 Tbsps lemon juice
1 tsp Worcestershire sauce
1 tsp Dijon mustard
2 cloves garlic
Salt/pepper to your taste
2 anchovies
½ cup Greek-style yogurt or kefir
½ cup mayonnaise
½ to 1 cup grated parmesan cheese
CLASSIC (but HEALTHIER) GREEN GODDESS DRESSING
...when you swap out all the mayo for Greek-style yogurt or even better, that super probiotic kefir!
2 Tbsps lemon juice
1 Tbsp extra virgin olive oil
½ tsp sea salt
1 garlic clove
½ grated lemon peel
1 Tbsp capers
1 cup parsley
1 cup Greek-style yogurt
1 cup mixed leafy herbs (basil, cilantro, mint, tarragon)
2 Tbsps chopped chives
Pepper freshly ground to your taste
1-2 Tbsps ice water (to thin to your preference)
CLASSIC (but HEALTHIER) TURMERIC HONEY GINGER DRESSING
...when you add some pepper to supercharge the turmeric!
2 Tbsps tahini paste
1 Tbsp ice water
1 Tbsp extra virgin olive oil
½ tsp turmeric powder
1 Tbsp lemon juice
¼ tsp pepper freshly ground
2 pieces of ginger
1 Tbsp honey
Sea salt to your taste

Mediterranean salad dressing recipe is super tasty, easy to make, and takes only 1 minute with some simple ingredients and no special equipment.
Mediterranean salad dressing is one of those salad dressing recipes that’s used all over the world, and for good reason. It's quick and easy to make and requires no special ingredients or cookware. In fact, no cooking is required.
___Ingredients you’ll need___
Makes around 100ml (3.4 fl oz.)
4 tablespoons of extra virgin olive oil
2 tablespoons of red wine vinegar
Juice from 1 lemon
1 tablespoon Dijon mustard
1 x minced garlic clove
½ teaspoon of dried oregano
Salt and pepper (to taste)
