How To make Mediterranean Tomato Salad
4 ea Tomatoes, thinly sliced
1 lg Cucumber
1/4 c Black olives, sliced
1/4 c Scallions, thinly sliced
1 c Celery, sliced
1/4 c Mint, chopped
3 tb Parsley, chopped
2 ea Garlic cloves, minced
DRESSING:
1/4 c Olive oil
2 tb Lemon juice
3/4 ts Salt
Black pepper, to taste Place tomatoes in a large serving dish. Peel the cucumber. Halve lengthwise, seed & slice thinly. Add to the tomatoes. Add the remaining salad ingredients, toss & set aside. DRESSING: Whisk together all the dressing ingredients in a small bowl. Pour this dressing over the salad, toss gently & refrigerate until ready to use.

???? 5 oz or ½ loaf of artisan bread such as ciabatta, cut into 1-inch cubes

???? 2 ¼ lb ripe tomatoes (I used vine ripe tomatoes), cut into small wedges or cubes

Tomato, cucumber and onion salad is a delicious Summer recipe that pairs well with any type of grilled meat or fish! Join Eric from Simply Elegant Home Cooking as he demonstrates his unique version of this classic salad! There are very keys to making this dish turn out great. Firstly, you want to be sure to buy the best produce you can find! Secondly, you want to season the dish generously and use fresh herbs to really enhance the flavor. The dish comes together dish a delicious homemade vinaigrette.
Ingredients:
-1/2 red onion
-1 seedless cucumber
-12 ounces cherry or grape tomatoes (preferably on the vine)
-1/2 lemon, juiced
-12 leaves fresh basil
-5 sprigs fresh thyme
-1/2 tablespoon red wine vinegar
-1/4 cup extra virgin olive oil
-1/4 teaspoon crushed red pepper flakes
-1 teaspoon dijon mustard
-salt and pepper to taste
Directions:
-Cut the tomatoes in half, using a serrated knife.
-Using a sharp knife, remove the ends of the cucumber. Cut the cucumber into medium sized discs, and then cut each dish into quarters.
-Remove the outer layer of the red onion and remove the core. Then slice the onion as thinly as possible.
-Roll the basil leaves tightly, above 4-5 leaves at a time. Use the sharp knife to slice into thin strips.
-Remove the thyme leaves using your fingertips and then mince them very fine with a knife.
-Combine the lemon juice, red wine vinegar, olive oil, dijon mustard, salt, pepper, and crushed red pepper flakes into a small bowl. Whisk vigorously for several minutes until the vinaigrette has thickened.
-Add the thyme leaves to the vinaigrette and give another quick whisk.
-Combine the cucumber, tomato, and onion into a large bowl. Add in the fresh basil. Pour over a majority of the vinaigrette and carefully stir until well combined. Taste for seasoning, and add more salt and pepper and more of the vinaigrette, if desired.
-Either cool in the fridge, if desired, or serve right away and enjoy!
