How To make Maverick Chili
2 lb Smoked pork neck-bones
3 1/2 lb Beef brisket rough ground
4 c Tomato sauce
1 c Green Bell pepper chopped
3 ea Onions lg. chopped coarsely
4 ea Jalapenos cored,seeded, &
- minced 2 tb Tabasco sauce
1 tb Salt
3 1/2 tb Chili powder
4 ea Garlic cloves minced
1 1/2 c Tomato paste
4 tb Cumin freshly ground
1 tb Mexican oregano
1/2 c Pimientos chopped
1 tb Maggi sauce
1 tb Chocolate syrup
12 oz Beer (not Lite)
1 c V-8 juice
1 c Strong coffee
Pick meat off of the neck bones and chop coarsely. Place meat, onions, Bell peppers, garlic into a large heavy pot and saute' until meat is browned. Add all liquid ingredients and 3 T of cumin alomg with all other spices. Bring to a slow, rolling boil. Cook at this point for 10 minutes then reduce heat to Simmer, add remaining ingrediants except the 1 T od cumin left, cover and cook for 1 hour. Be sure to stir fairly often. Add the remaining cumin and cook for 5 minutes. Serve or refrigerate and re-heat for a beter pot of chili. Origin: Joe & Patsy Kelloran, Chili-Team Leaping Lizards, circa 1991

* Ingredients
Rice flour- 3 cup
pottukadalai powder - 1 cup
sesame seeds - 2 tbsp
butter - 1 tblsp
Salt - As needed
chilli powder-1 tsp

Procedures :
First, grind the roasted grams in a mixer and sieve and sieve the rice flour. Place all ingredients in a mixing bowl and mix well. Gradually add hot water and knead.
For this I used a regular 3 eye plate. fill the dough and squeeze onto a greased laddle or plate, then carefully flip in the oil. Make sure the oil is hot enough.I fried 3-4 at a time. Cook until golden on both sides over medium heat. The sound should be stopped and the bubbles should be lowered.
Drain on a piece of paper before transferring to an airtight container.

The pornstar martini was invented by Douglas Ankrah, owner of the LAB London bar in London, United Kingdom, in 1999.
Although the name has proved controversial, Ankrah has denied that he named it a porn star martini to be deliberately provocative. In interviews, Ankrah claimed he used the porn star name to evoke a stylish and confident drink...[that's]….pure indulgence, sexy, fun and evocative. Ankrah has also denied being a fan of pornography or idolizing any porn stars in particular.

1 2/3 oz ( 50 ml ) Vanilla Vodka
5/6 oz ( 25 ml ) Passoa
1/2 oz ( 15 ml ) Vanilla Syrup

5/6 oz ( 25 ml ) Passion Fruit Syrup
1 2/3 oz ( 50 ml ) Passion Fruit juice
1 oz ( 30 ml ) Fresh Egg White (Optional)
HOW TO MIX
---------------------------------------------------
Add all the ingredients into a shaker with ice and shake ( I prefer the reverse dry shake technique for better foam ) remove the ice and dry shake, then strain into a chilled Martini cocktail glass.
Garnish: Half a passion fruit.

Ingredients for Simple Chicken Curry:
- Chicken- 1 kg
- Onion, rough chopped- 4 medium
- Ginger, crushed- 2 tsp
- Garlic, crushed- 2 tsp
- Tomatoes, roughly chopped- 3 medium
- Green chillies, thick chopped- 3 nos.
- Turmeric powder- 1/2 tsp
- Red Chilli Powder- 1.5 tsp
- Readymade Chicken Masala- 1 tbsp (store bought)
- Salt- 1.5 tsp
- Refined Oil- 4-5 tbsp
Preparation:
- Clean & wash the chicken pieces and keep it to drain.
- Roughly chop the onions, tomatoes and green chillies.
- Peel and crush the ginger and garlic cloves.
Process:
- Heat oil in a pan or kadai and add the chopped onions.
- Fry on high heat for 10 mins till brown in colour.
- Add the crushed ginger and garlic and fry on medium heat for 2 mins.
- Add the chopped tomatoes and green chillies and fry on medium heat for 2 mins.
- Add the turmeric powder and mix & fry on medium heat for around 3 mins till tomatoes are soft.
- Now add the chicken pieces and fry on high heat for 2-3 mins till the chicken pieces are browned.
- Add the readymade chicken masala, red Chilli powder and salt, mix and bhunno on high heat for 5 mins. Continue to fry on medium heat for another 5 mins.
- Now add 200 ml water and cook on low heat for around 20 mins till the chicken pieces are tender and oil separates.

In this video I smoke up some Over The Top Chili on my Pitts & Spitts Maverick 1250! This is a method i've seen done for a few years now and finally got around to trying it and It was really good! This Over The Top Chili actually turned out better than I expected and will for sure be doing it again! The Pitts & Spitts Maverick performed great yet again even with the snow I got during the cook. I highly suggest trying this Over The Top Chili with this recipe or your own if you haven't tried it before! The Tailgaters BBQ Party Rub added some really good flavor in this chili but I think I could've added just a pinch more! Thanks for watching, I will include the recipe I used below! ????????
