Spelt Semolina, Coconut + Marmalade Cake
Moist semolina, coconut and marmalade cake is adapted to a Sue Maree P spelt cake recipe inspired by Ottolenghi. I have wanted to bake this for a long time but have struggled to buy orange blossom water, however, I decided to adapt and bake this without. I have substituted for extra fresh orange juice and included my favourite spelt flour. This cake is amazingly moist and simple to make and worthy of trying. This style of cake with coconut and semolina improves with time if wrapped well and will keep moist for at least a week. Wrap with foil or parchment paper. Makes 2 x 500g loaf cakes or 1 larger loaf cake. Check my website for USA conversion for ounces, there's a toggle in the right-hand corner. #Ottolenghi #spelt #semolinacakerecipe #semolinacake

Jan Karon's Mitford Series: Esther’s Orange Marmalade Cake
I spent a day with my Aunt Cheryl and Uncle Ehrhardt. Cheryl and I love the Jan Karon Mitford books so we decided to bake together the famous orange marmalade cake that is given to so many people in the fictional town of Mitford. In the books, Esther shares the cake with those who may need a little extra love and support. I do believe baking is a type of ministry— for the bakers, as well as for the people who enjoy the delicious treats! When Krista picks Calvin up after school, he always asks for a special treat.” This was my special treat to be able to bake this cake with Cheryl! Enjoy our video!! And if you haven't read Jan Karon's Mitford books, go check them out. They are books that warm your heart and make you remember the simple joys of life. Cheryl and I used Jan Karon's Mitford recipe book to find this recipe. It really is delicious!
