1 Egg 1 1/4 c Buttermilk or sour milk 2 tb Shortening, soft 1 1/4 c Flour; sifted 1 ts Sugar 1 ts Baking powder 1/2 ts Baking soda 1/2 ts Salt 1/2 ts Vanilla extract (or 1 tsp) 1 tb Maple syrup Heat griddle slowly while mixing batter. Beat egg well. Beat in all other ingredients until smooth and pour onto griddle. Pancakes will be sweet and fluffy. Adjust vanilla extract and maple syrup measurements to taste. Ingredients: 2-3 ripe bananas 200 g flour 2 eggs 50 g brown sugar 150 ml buttermilk 1 tsp. baking powder few drops of vanilla sugar/vanilla paste/vanilla extract lemon juice oil or margarine for cooking
TIPS: 1) If you don't have food processor, just mash the bananas and whisk the eggs using a fork, then mix all the liquid ingredients (please see video).
2) If you don't have buttermilk: 1. you can use the same amount of milk, remove 1tbsp. and add 1 tbsp. of vinegar or lemon juice.
2. You can also use plain yogurt or 1 3/4 tsp. cream of tartar plus the amount of milk.
