How To make Mageritsa (Easter Lamb Soup)
Karen Mintzias Intestines, heart, lungs, & liver of 1 lamb. 1 lamb's feet and tripe, opt
1 Lamb's head (optional)
Salt 2 Lemons (juice only)
1 sm Bunch scallions; chopped
2/3 c Chopped fresh parsley
1/2 c Chopped fresh dill
1/4 c Chopped celery leaves
6 tb Raw long-grain white rice
1/2 ts Aniseed (optional)
Freshly ground pepper 3 Whole eggs
Note: If using the lamb's head, wash it, then soak it in cold water for 3 hours. Drain. Cut the head in half, using a sharp knife, and tie with a clean string. If using the lamb's feet and tripe, prepare as follows: If tripe is not parially cooked, cut open with a sharp knife and clean the inside thoroughly under running water. Put in a pan with cold salted water to cover and soak for 30 minutes, then drain and wash with cold water. Cut into small pieces and put in a large soup pot with the lamb's feet. cover with cold water, and simmer until tender, adding salt to taste during the last minutes of cooking. Cube the tripe, remove the meat of the feet from the bones, and add to the mageritsa at the same time as the cut-up intestines, adjusting the liquid by adding more water. Clean the intestines thoroughly by turning them inside out, using a long skewer or stick (this turning will be quicker if the intestines are first cut into 2-foot lengths), then wash under cold running water until clean. Rub the intestines with salt and the juice of 1/2 lemon, rinse again in cold water and drain. Braid the intestines or tie the ends together with clean string. Put in a large soup pot with the lamb's head, if using, and cove with cold water. Bring to a boil, then lower the heat, skim, and simmer for 30 minutes. Remove the intestines, drain them, and cut into 1/4 inch pieces with the scissors and set aside to add to the soup later. (Use the remaining portion of the head for another dish.) Bring the soup stock to a boil and add the scallions, parsley, dill, and celery leaves. Cut the heart, lungs, and liver into small bite-sized cubes, and add them to the soup, and simmer for 15 minutes. Add the rice, cut-up intestines, aniseed, salt and pepper to taste and continue simmering until the rice is tender, approximately 15 minutes, adding more water as needed and the brains during the last few minutes of cooking. Half an hour before serving, bring the soup to a boil, then remove from the heat and prepare the avgolemono: Beat the eggs for 2 minutes. Continue to beat, gradually add the remaining lemon juice. Then 1 to 2 cups of the hot soup by droplets, beating steadily, until all has been added. Add the avgolemono to the soup. Stir over minimum heat until thickened. Serve warm but avoid boiling the soup after adding the avgolemono. A richer Mageritsa can be made by sauteing the scallions in 3 tablespoons butter or oil before adding to the soup. 1 kg Beef Tongue
500 g Ox Liver
500 g Lamb Liver
250 g Chicken Liver
3 Leeks, 5 fresh Onions
2 large Onions, 5 Garlic cloves
1 cup fresh Dill, 1/2 cup Coriander
1 Tbsp Hemp Seed Powder
1 shot of Brandy (optional)
2 Tbsp Tapioca flour (starch)
1-2 Lemons
2 Bay Leaves, Cumin, Pepper & Salt
Method on how to prepare Magiritsa Soup:
Step 1
In a pressure cooker:
Place the Beef Tongue, the Onions, Garlic & Bay Leaves. Close & wait for it to cook. Once it has been cooked, take out of the pressure cooker & place in a cold bath (In a bowl add lots of ice with water). This will facilitate the removal of the skin from the Tongue. After you have removed the skin from the Tongue you will need to cut it in small cubes, then put aside.
The Broth:
The Broth from the Tongue we will be using to make the soup. Add an additional 1.7 litres of water to the Broth. Put aside until you have fried the livers.
Step 2
Cut all the ingredients, Lettuce, Onions, Fresh Onions, Leeks, Fresh Dill & Fresh Coriander. Then cut the Chicken Livers, Ox Liver & Lamb Liver in cubes.
Step 3
In a large pan, add Butter & Olive Oil, add the Onions, Leeks, Fresh Onions & fry for 5 minutes. Proceed by adding the spices: Hemp Seed Powder, Cumin & Pepper. Now it’s time to add the Livers & the Bay Leaves. Towards the end of frying the Livers, which will take you about 7 to 10 minutes, add the shot of Brandy & lower the heat. Take some Liver out to try to make sure they have been cooked through. Put aside & bring the big pot with the broth, proceed to step 4.
Step 4
Place the big pot with the broth on the stove & switch on to medium heat. Start by adding the Tongue which you have cut in cubes, the Lettuce & the Livers. Now you should add the Fresh Dill & Fresh Coriander. Stir well. In the meantime, prepare the Tapioca Flour Starch or Arrow Root (if you don’t have either of the ones proposed then you can add Cornflour preferably organic) with cold water & pour in the soup. This will make the soup creamier & thicker.
Step 5
It’s time to add the Lemon to the soup, for that nice lemony flavour. Stir well & add some more Salt & Pepper.
Step 6
The whole process of adding all the ingredients in the soup will take you approximately 15 to 20 minutes. I would suggest keeping the stove on medium heat. When all the ingredients have been added, you then switch off the stove & leave to cool a little bit.
Step 7
You have now reach to the point of serving yourself & well deserved as it has been a lengthy process. I hope you enjoy it as much as my family does, every year!

Easy Mageiritsa | Greek Easter Lamb Soup
INGREDIENTS
400g lamb
400g liver (chicken liver may also be used)
1 lettuce
1 bunch dill
1 bunch parsley
½ bunch fennel (optional)
3-4 scallions
1 large onion
2-3 cloves garlic
½ cup olive oil
1 espresso cup soup rice (80g)
2 lemons
1 egg
Salt & pepper according to taste
1 tbs corn flour
Water

Γειά σας φίλοι μου,
Η σημερινή συνταγή για μαγειρίτσα είναι μια εύκολη εκδοχή της παραδοσιακής. Μπορείτε να την διαμορφώσετε ανάλογα με το γούστο σας, χρησιμοποιώντας ότι πρωτείνη προτιμάτε, αλλά η χρήση αρνιού την κάνει εξαιρετικά νόστιμη. Εύκολα και σχετικά γρήγορα θα έχετε ένα τέλειο πιάτο που δεν έχει τίποτα να ζηλέψει από την πραγματική μαγειρίτσα και το σπίτι θα μοσχοβολήσει Πάσχα!
Καλό Μαγείρεμα και καλό Πάσχα!
ΥΛΙΚΑ
400γ αρνί
400γ συκώτι
1 μαρούλι
1 ματσάκι άνηθο
1 ματσάκι μαϊντανό
½ ματσάκι μάραθο (προαιρετικά)
3-4 κρεμμυδάκια φρέσκα
1 μεγάλο ξερό κρεμμύδι
2-3 σκόρδα
½ φλ ελαιόλαδο
1 φλ του ελληνικού καφέ ρύζι γλασέ (80γ)
2 λεμόνια
1 αυγό
Αλάτι και πιπέρι κατά προτίμηση
1 κσπ κορν φλαουρ
Νερό
ΕΚΤΕΛΕΣΗ
Βάζουμε σε κατσαρόλα νερό να βράσει και ρίχνουμε μέσα το συκώτι για 1-2 λεπτά να ζεματιστεί.
Το αφαιρούμε και στο ίδιο νερό βάζουμε το κομμάτι του αρνιού να βράσει μέχρι να γίνει τρυφερό και να αφαιρείται εύκολα από το κόκκαλο.
Κόβουμε το συκώτι σε μικρά κομματάκια.
Ξεκοκκαλίζουμε το αρνί μόνο το ψαχνό και το κόβουμε εάν χρειάζεται κι αυτό σε μικρά κομματάκια.
Ψιλοκόβουμε όλα τα μυρωδικά, το κρεμμύδι και τα σκόρδα και κόβουμε σε πιο χοντρά κομμάτια το μαρούλι.
Σε δυνατή φωτιά ρίχνουμε το ελαιόλαδο και χαμηλώνουμε λίγο για να τσιγαρίσουμε για 1-2 λεπτά το ξερό κρεμμύδι και στη συνέχεια και το φρέσκο μόνο το λευκό μέρος (το πράσινο μέρος το ρίχνουμε αργότερα στην σούπα).
Προσθέτουμε και το σκόρδο και τσιγαρίζουμε για 1 λεπτό.
Ρίχνουμε το συκώτι και το περνάμε για 1 λεπτό μαζί με τα κρεμμύδια. Προσθέτουμε και το αρνί και τα ανακατεύουμε.
Σβήνουμε με τον χυμό ενός λεμονιού.
Αλατοπιπερώνουμε και προσθέτουμε το νερό μέσα στο οποίο είχαμε βράσει το αρνάκι.
Ρίχνουμε και το ρύζι και τα αφήνουμε όλα να βράσουν μέχρι το ρύζι να έχει σχεδόν ψηθεί αλλά όχι τελείως.
Τότε προσθέτουμε όλα τα μυρωδικά, το πράσινο μέρος από το κρεμμυδάκι το φρέσκο καθώς και το μαρούλι.
Τα αφήνουμε να σιγοβράσουν για 5 ακόμα λεπτά και σε αυτό το διάστημα φτιάχνουμε το αυγολέμονο.
Χτυπάμε ένα αυγό με το χυμό ενός λεμονιού, εάν θέλουμε σε αυτό το στάδιο μπορούμε να προσθέσουμε και μία κουταλιά της σούπας κορν φλάουρ για να δέσει λίγο η σύσταση της σούπας μας, και προσθέτουμε σιγά σιγά ζωμό από την σούπα που βράζει.
Όταν το αυγολέμονό μας έχει πάρει αρκετή θερμοκρασία, για να μην μας κόψει πέφτοντας στη ζεστή σούπα, το ρίχνουμε σιγά σιγά μέσα στην κατσαρόλα ανακατεύοντας.
Εάν θέλουμε μπορούμε να προσθέσουμε το κορν φλάουρ στο τέλος διαλυμένο σε λίγο κρύο νερό.
Αφήνουμε να πάρει μια βράση για 1-2 λεπτά και είναι έτοιμη.
