Machaca Recipe (Mexican Dish). I'm using roast beef and it taste so good.
Machaca is a Mexican dish.
First time I ate Machaca I liked it so much when I was in San Deigo. Then I make my own version for Machaca using pot roast or roast beef, and I love it. Taste so good :).
Machaca for those who do not know is basically meat, peppers, onions and eggs. The magic happens in the technique used to cook it. Roasting the peppers is ALWAYS a good idea. The meat should be a pulled style meat (Carne Deshebrada or Carnitas) and the way you cut the veg is important. Then you have to find a way to keep it juicy. I used some Roasted Poblano Salsa to add back juice. Then, just add your eggs, scrambled or fried and enjoy! This recipe takes that one step further and rolls it all up into a burrito for one handed eating. Road Machaca if you will. Enjoy!
