How To make Macaroni & Cheese Souffle
1 1/2 c Corkscrew-shaped macaroni
2 tb Butter or margarine
3 tb Flour
1/2 ts Salt
1/2 ts Paprika
1 ds Cayenne
1 1/4 c Milk
6 oz Natural sharp Cheddar cheese
-- shredded 3 Eggs; separated
Preheat oven to 350 F (moderate). Grease a 2-quart casserole. Cook macaroni according to package directions. Melt fat in a large saucepan. Stir in flour, salt, paprika, and cayenne. Add milk. Cook over moderate heat, stirring until thickened. Remove from heat. Add cheese and stir until melted. Beat egg yolks until light. Fold into macaroni and cheese mixture. Pour into casserole. Bake for 35 to 40 minutes or until center is firm to the touch when pressed lightly. Serve immediately. This Macaroni and cheese gratin (Mac & Cheese in America) is quite a popular in the region of Lyon in France and it is quite often serve with beef stews. Of the course the French version differs from its American counterpart but uses similar ingredients with the addition of Butter cream and garlic.
There are many variants to this dish in France, some of which do use some flour with the milk to add thickness to the sauce or some other version that have addition of ham cube bacon or onions.
The cheese used in France is usually the Emmental cheese but the Macaroni and cheese recipe can be made with a wide array of other French cheese too. Personally I would say that the best cheeses to use are the one that give you that nice strings of cheese effect.

I've been supremely been enjoying Gordon Ramsay's recipes lately. I want to continue the trend and make his Mac and Cheese with a twist...cauliflower. I love macaroni and cheese, its one of the first foods I remember ever having: boxed mac & cheese. In Canada, we call it KD (Kraft Dinner). So, I'm well versed with the dish. I had never tried Gordon's version of Mac & Cheese, so here we go!

Mac & Cheese Souffle
Menu apa yang jadi pilihan untuk berbuka hari ini? Apa kata cuba resipi macaroni & cheese souffle, khas dari SEROJA?
Bahan-bahan:
1 cawan makaroni yang telah siap direbus
1 1/2 sudu besar mentega
1 sudu besar tepung gandum
3/4 cawan susu
3/4 cawan Cheddar cheese (dicincang)
1 biji tekur kuning
2 biji telur putih
1/2 biji bawang besar (dicincang)
Daging ayam (dicincang)
Garam & lada hitam
Cara penyediaan:
1. Panaskan ketuhar pada 180 darjah Celsius.
2. Grillkan bawang besar bersama daging ayam. Taburkan garam dan lada hitam untuk perasa.
3. Setelah masak, angkat dan ketepikan.
4. Cairkan mentega, masukkan tepung dan gaul sehingga satu minit dengan api sederhana.
5. Tuangkan susu perlahan-lahan, kacau tanpa henti untuk elakkan ketulan.
6. Masukkan garam dan lada hitam secukup rasa. Kacau sos sehingga pekat.
7. Matikan api, masukkan keju dan gaul sehingga cair.
8. Pukul telur kuning dan campurkan ke dalam sos tadi. Gaul sebati.
9. Campurkan makaroni rebus bersama ayam yang telah digrillkan ke dalam sos keju tadi.
10. Pukul telur putih di dalam bekas yang lain sehingga kembang.
11. Masukkan separuh ke dalam campuran makaroni, ayam dan sos keju tadi. Gaulkan dengan lembut dan berhati-hati.
12. Tuangkan ke dalam mangkuk tahan panas yang telah disapu mentega. Kemudian, tambahkan lebihan putih telur yang telah dipukul tadi sebagai topping.
13. Bakar di dalam ketuhar selama 10 minit atau apabila souffle telah kekuningan.
