1 1/2 c Corkscrew-shaped macaroni 2 tb Butter or margarine 3 tb Flour 1/2 ts Salt 1/2 ts Paprika 1 ds Cayenne 1 1/4 c Milk 6 oz Natural sharp Cheddar cheese -- shredded 3 Eggs; separated Preheat oven to 350 F (moderate). Grease a 2-quart casserole. Cook macaroni according to package directions. Melt fat in a large saucepan. Stir in flour, salt, paprika, and cayenne. Add milk. Cook over moderate heat, stirring until thickened. Remove from heat. Add cheese and stir until melted. Beat egg yolks until light. Fold into macaroni and cheese mixture. Pour into casserole. Bake for 35 to 40 minutes or until center is firm to the touch when pressed lightly. Serve immediately. This makes a large pan of mac and cheese. Easy to freeze in family serving sizes. Here's the recipe: 3 - 8 ounce boxes elbow macaroni (24 ounces) 2 pounds of sharp cheddar cheese, shredded 1 2/3 cups non-fat dry milk 5 cups water 1/2 cup butter (one stick) plus one tablespoon 1/2 cup + 1 tablespoon all-purpose flour 2 tablespoons Dijon mustard 1 teaspoon salt 1/8 teaspoon ground nutmeg Bake in preheated oven 325 degrees for 30-45 minutes until slightly brown on top. I made GORDON RAMSAY'S Mac and Cheese
I've been supremely been enjoying Gordon Ramsay's recipes lately. I want to continue the trend and make his Mac and Cheese with a twist...cauliflower. I love macaroni and cheese, its one of the first foods I remember ever having: boxed mac & cheese. In Canada, we call it KD (Kraft Dinner). So, I'm well versed with the dish. I had never tried Gordon's version of Mac & Cheese, so here we go!
