MENUDO Rojo | Perfect Step By Step ❤
This MENUDO Rojo is one of my favorite mexican dishes, I was brought up having this amazing dish atleast 3 times a month. I season it well just like I have been doing for years, the unique flavor of this wonderful dish is like no other. I use Beef tripe (pancita) and beef feet which is a winner! I use as many fresh ingredients as possible like guajillo chiles, Ancho chiles and New Mexico dry chiles and I season it with oregano, cumin, coriander and lots of garlic and onions along with cloves, and allspice making it the 5 star dish that it is.
INGREDIENTS-----------------------------
3 & 3/4 LB. BEEF TRIPE (Pancita)
4 beef feet
2 garlic heads (cloves peeled and blended)
4 large garlic cloves (for blender)
2 tsp whole cumin (ground in molcajete)
1 tsp peppercorns (ground in molcajete divided
Salt (as needed)
3 Bay leaves
5 whole Allspice (ground in molcajete)
3 cloves (ground in molcajete)
2 tsp ground coriander
1 & 1/2 Tbsp Mexican oregano
3 tsp onion powder
3 tsp garlic powder
9 dried guajillo chiles
3 dried Ancho chiles
2 New Mexico dried chiles (you can substitute guajillo)
1 & 1/4 large onion (divided)
2- 30oz. cans white hominy drained
14 C. water
1 C. chile water (for blender)
YOU CAN USE POWDER FORM INGREDIENTS IN PLACE OF GRINDING IN MOLCAJETE
BLENDER INGREDIENTS------------------
SOFT CHILES
1 tsp cumin
1/2 tsp peppercorns
5 whole Allspice
3 cloves
1 & 1/4 Tbsp Mexican oregano
2 tsp Coriander (ground)
3 tsp garlic powder (provides stronger presence than fresh)
3 tsp onion powder (provides stronger presence than fresh)
Salt (as needed)
1 C. chile water
■ YOU CAN ADD CHICKEN BOUILLON IF YOU LIKE FOR DELICIOUS ADDED FLAVOR, MY RON LOVES IT. ADD AS NEEDED IF YOU DECIDE TO TRY IT.

1/2 small onion

How to make The BEST Mexican Menudo Rojo Recipe
Hello & welcome to the Views Kitchen, Today we will be showing you how to prepare Menudo Rojo ???? Menudo is a traditional Mexican soup made with cow’s stomach (honeycomb tripe) in a chili broth. The recipe I’ll be showing you today is mild in spice and full of flavor. You can make this recipe with cow’s feet or pig's trotter and the flavor although slightly different is guaranteed you have your Menudo lovers asking for seconds; You know how soft the foot gets amigos ????. Just when you think this recipe can’t get any better, I’ll be showing you how to make a tasty bolillo (bread) toast that we all love to pair with our delicious soup. Now if you prefer menudo with a corn tortilla not to worry as you can always make it comfortable for your home. Make sure not to go to heavy on your chiles as Menudo has a light chile broth, not thick like as Pozole friends; Keep it light. Ingredients & Tips
4 liters of water (18 cups)
7 pounds of cow’s foot or Pork Feet (pig's trotter)- Cook time will be the same
2 pounds of menudo surtido
2 pounds menudo casita/ Beef honeycomb tripe
2 pounds beef tendon (optional)
10 Guajillo chiles
2 ancho chiles
1 medium onion (or half large onion)
6 green onions
7 medium bay leaves
2 garlic bulbs
Hoja santa or epazote/ Piper auritum (optional as its difficult to come by in the states)
2 tbsp salt (Himalayan)
To clean tripe
Water
1/2 Tbsp salt
2 limes
-you can sub limes for 1/4 cup white vinegar + salt- Make sure to rise thoroughly
To clean beef foot
Water
1 tablespoon salt
To clean tendon
Salt
Toppings& sides- finely chopped cilantro, white onion, limes, chiltepines, bolillo bread + butter or corn tortillas : )
1. Clean and remove all fat from tripe- let soak for 10 minutes -rinse thoroughly
-clean beef foot and tripe- rinse thoroughly
2. Add water to the pot and bring to a boil- continue boiling for 10 minutes- then remove impurities
3. Add salt, onion, garlic, and green onion-
-Place a lid-Continue to boil for 2 1/2 hours on a low heat
4. Roast guajillo and ancho chiles- remove seeds- Boil chiles in a pot of water for 8 minutes till soft- Add 3 cups of Menudo broth from your pot to the blender- Add chiles and blend till smooth
5. Stain blended chiles to your broth- Add tripe and bay leaves
-Place a lid- Continue boiling for 1 1/2 hours on low heat
6. If this is all the ingredients you enjoy in Menudo turn burner off- Add Oja Santa or Epazote (optional)- remove after 3 minutes
FOR HOMINY LOVERS WE HAVE A FEW MORE STEPS!
7. Rinse can of hominy and add to pot of boiling Menudo
-Place a lid- Continue boiling for 20 to 30 minutes until hominy is soft and tender
8. Turn your stovetop off and add Oja Santa or Epazote (optional)- remove after 3 minutes
9. Boom Done! Ready to serve amigos ????

1 onion, sliced
4 pcs tomatoes, sliced

1 cup tomato sauce
½ cup banana catsup
Water, as needed
Sugar, salt, black pepper, as needed
Soy sauce, as needed
2 pcs carrots, cut into cubes
3-4 pcs red bell peppers, cut into cubes
3-4 pcs potatoes, cut into cubes
6-8 pcs hotdogs, sliced
