1 pound lima beans
3 cups chicken broth
3 cups water
2 garlic cloves
2 bermuda onions
1 cup celery
diced
1 cup carrots :
sliced
1 bay leaves
hot pepper sauce -- optional
1. Prepare lima beans by picking over to remove any debris that
might be i n package. Rinse beans well. Cover with about 8 cups water. Bring to a boil, co ver and boil 2 minutes. Remove from heat, keep covered and allow to stand for 1 hour or more. 2. While beans are soaking, prepare the ham hocks (or use meaty
ham bones) . Combine the 3 cups broth and 3 cups water in a large heavy pan with lid; brin g to a boil. Add the ham and simmer for about 1 hour. 3. Drain the beans, running hot water over beans briefly to
rinse. Add the beans to the ham mixture. Slice the onions and separate into rings. Add the on ions, along with the carrots, celery, and bay leaf, to the pot. Mince the garli c cloves or use a garlic press; add to mixture. Add fresh ground black pepper a nd salt if you prefer. Ham is salted already so you may not want to add salt at this point. Pour additional broth or hot water over this mixture to reach abou t 1 inch above the ingredients. 4. Simmer for about 1 hour, stirring several times, checking to
see if you need to add more liquid. After beans and vegetables are tender, remove the ham hocks or bone. Remove the meat from bones and add back to the bean mixture. Ta ste and add more salt or pepper if you wish; also add hot pepper sauce to your taste.

Easy Ham and Lima Bean soup | Bean Soup | Ham bone soup
NO MORE CANNED SOUPS!!!! The EASY ham and Lima bean soup is delicious and economical!! Ham bone in this soup is what sets it apart. Bean soup never tasted so good.
Get ready to learn how to make an amazing and easy healthy ham and bean soup. In this video you will start to learn how easy it is to make wholesome, amazing, delicious soup from scratch.
Back in December I reminded everyone to save that ham bone from the holidays. Today is the day to get it out. Let it defrost in your refrigerator overnight.
ham bone
3 cups ham (or whatever you have on your bone)
1 - 1 1/4 lbs large lima beans
4 potatoes cubed
5 carrots sliced
3 stalks of celery
1 medium onion diced
8 cups of boiling water
vegetable base
salt & pepper to taste
Add ham bone (with meat) and beans to crock pot with all vegetables. Pour in 8 cups of boiling water. Add approx. 1/4 t of pepper and 1 t of salt. Cook at high temp for 4 - 5 hours. DO NOT salt at this point. Some hams have a lot of salt in them, and you may not need to add any.
Remember this process is 2 fold. 1) you are making a ham stock 2) you are cooking your beans and veggies too.
After 4 -5 hours of cooking taste your stock. The ham bone should have really flavored your liquid and the flavors of the vegetables should be adding flavor too. Take ham bone our and let cool off. Once cooled take meat off bone and add back to your soup. Also turn down your crock pot too low.
Sometimes you need to add more flavor to your stock.
At this point adding a soup base would really help give your soup some depth. Soup base is concentrated stock. There are many kinds available. Some soup bases are all natural and have amazing flavors. Other types taste like bouillion. I would stick with the organic, all natural versions. These can be found in the same aisle as stocks at your local grocery store.
Add 1 - 2 teaspoons if necessary to your soup. Stir and taste to see if you need more. Soup base is salty and replaces any salt you would add into your soup.
Add more pepper if necessary and continue to cook on low until beans, potatoes, and carrots are soft.
