1-2 fresh or frozen chicken breasts
2-4 tsp of olive oil
1 lemon
1 clove of garlic or garlic powder whatever you have on hand is perfect.
1/4 tsp of salt
Mediterranean herbs for the top or whatever herbs you have on hand that will go with chicken.
Bake @ 450* between 15-25 min depending on size of chicken breast. Chicken is fully cooked and done when the chicken is at 165* inside the chicken. If you have a thermometer you can put it in the thickest piece of the chicken to make sure it is done. let rest for 10 min before cutting. My chicken breast was quite large so I needed to cook it for 25 min.

4-5 pieces chicken thighs, (You can use skin-on, bone-in, or skinless. Thighs and drumsticks recommended)
⅓ cup lemon juice, fresh squeezed
2 Tablespoons lemon zest
¼ cup olive oil, (optional)
4 cloves garlic, minced
2 Tablespoons fresh chopped thyme (or 2 teaspoons dried)
1 Tablespoon fresh chopped rosemary (or 1 teaspoon dried)
1 teaspoon salt
1 teaspoon black pepper
2-3 Tablespoons butter, melted

Lemon Chicken Easy Recipe
Ingredients for Chicken Marination :
- 400 grms Chicken Breast
- 1 tsp Soy sauce ( Light soy sauce )
- 1 Egg
- 1 tsp Black Pepper
- 2 tbsp Cornflour
- 2 tbsp All Purpose Flour
- 1/2 tsp Turmeric Powder
- 1 tbsp Ginger Garlic Paste
- 1 tsp Salt
Ingredients for Sauce :
- 3 tbsp oil
- 1 tbsp Ginger
- 1 tbsp Garlic
- 1 Onion
- 2 Green Chillies
- 1/2 cup Chicken Stock
- 1 tsp Soy sauce ( Light soy sauce )
- Lemon Yellow Food Colour (Optional)
- 2 Lemon
- Cornstrach ( mix 1 tsp cornflour in water)
- Spring Onion
Preparation Method :
- Cut boneless chicken into medium size piece, wash, pat dry and keep a side
- In a Bowl add Egg, All purpose flour, Cornstarch, Turmeric, Black Pepper Powder, Ginger Garlic Paste, Soy sauce, combine everything into a smooth paste.
- Now add Chicken cubes to the bowl and give a good mix by adding Salt
- Cover the Bowl and marinate chicken pieces for 15-30 minutes
- Heat oil in a wok, when oil is hot, gently drop the marinated chicken pieces one by one.
- Fry until golden brown in colour and then remove fried chicken on a plate lined with tissue paper to remove excess oil
- Take a deep bottom non stick pan, add 3 tbsp cooking oil to it
- Add finely chopped Ginger sauté then add chopped Garlic, add finely diced Onion and then chopped Green chillies sauté until translucent
- Add salt as per taste, soy sauce, then add Chicken Stock
- Now in a small bowl add 1 tsp cornflour add little water, mix it and then add this cornstarch to the pan, give a good mix
- To get restaurant style colour, add 2 drops Lemon Yellow Food Colour ( This step is optional)
- Add lemon juice, bring to boil, now add fried chicken pieces to the sauce
- Mix everything and Garnish with Spring onion
- Serve hot Lemon Chicken as appetizer !

LEMON GARLIC GREEK YOGURT MARINATED CHICKEN ???? RECIPE BELOW ????????
ingredients
8 bone in skin on chicken thighs
1 cup Greek yogurt
1/4 cup olive oil
5 cloves garlic
1 large lemon, juiced
2 tsp salt
2 tsp dried oregano
1 tsp paprika
black pepper to taste
optional dip/topping:
tsatziki
fresh parsley
chili pepper flakes
instructions
Rinse and pat dry your chicken pieces with a paper towel.
In a large bowl, mix the yogurt, olive oil, garlic, lemon juice and spices. Add the chicken to the bowl and coat everything well. Cover the bowl and refrigerate for a minimum of half an hour (I recommend 1-2 hours).
Take your meat out 30 minutes prior to putting it in the oven.
Preheat your oven to 375°F. Transfer the chicken to a 9×13 baking dish. Take the leftover marinade and add it to the bottom of the pan. Top with the last two pieces of chicken. Bake for about 50 minutes or until golden brown. Make sure internal temperature of chicken reaches 165°F. Let it rest out of the oven for 5 minutes and then serve.
notes
You can use chicken breasts or boneless skinless thighs in lieu of the above bone in skin on. The only change you will make is to lessen the bake time by 20 minutes or so.
