VEGAN PIE - Complete Recipe - Fluffy Crust and Fruit Filling (Apple, Blueberry, Pumpkin)
COMPLETE Recipe for Vegan Pie - Fluffy Crust and Fruit Filling (Apple, Blueberry, Pumpkin)- This video will cover everything from how to make the crust and how to prepare the perfect filling that is sure to please!
Ingredients for 1 Pie
Fluffy Crust
2 - Cups of flour
1 tsp brown sugar
1/2 tsp salt
1/2 tsp baking powder
1 1/2 coconut oil
1/3 cup of cold water
1 tsp vinegar
3 tbs chia seeds
some vegan margarine (optional)
Filling for fruit pie (for apple just add 1/2 tbs cinnamon)
4 cups of fruit of your choice
1/3 cup flour
2/3 cups sugar
1 or 2 tbs of lemon juice
Pumpkin Pie filling
1/2 can of pumpkin pie filling (400 ml)
1/2 cup packed brown sugar
1/4 cup maple syrup (if you have none then use 1 full cup brown sugar)
1 tsp cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1 cup of milk (any vegan brand will do)
Directions
1) Make sure to have all tools necessary - Rolling pin and board, measuring cups, pie tins
2) Rule one is always to remember to mix the dry ingredients with the dry. The wet ones with the wet then mix them together.
3) Before you add the wet to the dry mix the coconut oil with the dry. Make sure to mix well with your hands. Make sure its not to dry if more coconut oil is needed feel free to add.
4)Make sure chia seeds soak well with hot water. You can be generous here because its the chia seeds that will be holding crust together.
5) Be very patient with the rolling of the dough and use lots of flour so it doesn't stick to pin or board. Also be very generous with the amount of dough to keep integrity of good thick crust and it will roll better. ( If your crust breaks NO WORRIES just piece it together like I did and it will bake together ;) )
6)While doing fruit filling put damp cloth over filling to keep moist
7) when doing fruit filling the trick is to remember to mix the flour and the sugar together before you add it to the fruit. Don't forget the lemon.
8) Don't forget to put 3 little bits of vegan margarine on the fruit so it soaks in while it bakes.
9) Make sure to tuck the lid crust under the crust in the pie tin. Glaze the top with margarine to make a golden top.
10) bake at 375 for 45 minutes or until top is golden brown. If for some reason the top is not going gold brown after 45 mins turn on top element of stove for 10 mins and that will do the trick.
11) Let sit for 30 - 45 mins then ENJOY YOUR DELICIOUS CREATION!!

Old Fashioned Shaker Lemon Pie - Historical Recipe
Hello and welcome to Old Ways Gardening and Prepping.???? Would like to welcome you each out to the shed of many names this evening. By popular request during my last live stream we will be making the lemon pie that many were interested in. Personally absolutely love this lemon pie and it just brightens you up within while eating it.
It's a very simple and easy pie to make. The roots of this pie go very far back to the days when the Shakers first started coming over to the colonies. They were a very simple and frugal religious group. They completely believed in not wasting anything. So this recipe predates the 1950 Mennonite cookbook that this recipe came from. It was listed as very old in this cookbook.
Shaker Lemon Pie
2 large or 4 small lemons, seeded and sliced paper thin
2 1/2 cups of cane sugar
1 tsp. of salt
4 large eggs
2 TBsp's of all-purpose flour
1 regular pie shell but you can get away with using a deep dish pie shell
Hope this video encourages you as well to make this amazing old fashioned pie. It is simple and delicious. If you have any questions please feel free to ask them in the comment section I will answer them as soon as possible. Everyone take care and have a blessed day.
Blessings,
Teresa
