Ingredients
Pie Crust
2 1/2 cups crumbled crackers Ritz or saltine crackers
1/3 cup melted butter
Pie Filling
2 tbsp butter
2 1/2 cups thinly sliced Vidalia onions
3/4 cup milk
Four tomatoes (remove the seeds) and dice
Three eggs
4oz cream cheese
1/2 tsp salt
1/4 tsp black pepper
1 Tablespoon Italian herbs
dash hot sauce
1 cup grated cheddar cheese
1/2 tsp dry parsley
Instructions
Preheat oven for 350F.
Mix the melted butter into the crumbled crackers until the butter is absorbed all the crackers are wet with the butter. Evenly spread into a 9-inch pie pan and press on the bottom and along the sides to make a pie shell.
Heat the 2 tbsp butter in a skillet over medium-low heat. Add the sliced onions and saute until they are tender. This should take about 10 minutes.
While the onions are sauteing, whisk together the milk, eggs, salt, pepper, Italian herbs, and hot sauce in a bowl until well mixed.
Once the onions are tender, evenly spread on the cracker pie crust. Pour egg mixture over the onions in the pie crust. Top with grated cheese and parsley.
Bake in 350F oven for 40 minutes.
Let cool for 5 minutes. Slice and serve.

HOW TO MAKE TAMALE PIE - Chicken Tamale Pie Recipe
Hello All, I am back with my first recipe of the year. Tamale Pie! This is a delicious comfort food casserole. You can use the meat filling of your choice! You can also go vegetarian and use a saute of your favorite veggies. This recipe easily serves 6 to 9 single servings. I hope you enjoy the video!
INGREDIENTS
2 lb rotisserie chicken (shredded)
8 oz block cheddar cheese (shredded)
ENCHILADA SAUCE
1 1/2 tbls chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ground cumin
3 tbls flour
1 tomato flavored chicken buillion cube
1/4 cup oil
2 cups water
CORNBREAD
2 cups yellow corn meal
1 1/2 cups all purpose flour
2 large eggs
1 tbls baking powder
2 tsp sea salt (use less if using table salt)
3 tbls sugar
1/4 cup oil
2 1/2 cups whole milk
**You can also just use 2 boxes of jiffy cornbread mix
**Preheat oven to 400 degrees Fahrenheit
**Bake Casserole for 22 - 25 minutes

Ingredients:
For the meat mixture:
2 pounds (1kg) ground lamb
1 large onion, chopped
3 garlic cloves, crushed
3 tbsp olive oil
4 tbsp (30) flour
1/2 tsp salt
1/2 black pepper
1 tsp rosemary
1 tsp thyme
1 tbsp tomato paste
2 cups beef broth
7oz (200g) carrots
7oz (200g) peas (fresh or frozen)
For the puree:
3.5 pounds (1.5kg) potatoes
1 tbsp butter
1/2 cup (120ml) milk
1/4 cup (25g) cheddar cheese
1/2 tsp salt
1/2 black pepper
egg yolk
Directions:
1. Peel the potatoes and cut into 4. Place in a medium pot and cover with cold water. Set over high heat, add a teaspoon of salt, cover and bring to a boil. cook until tender.
2. While the potatoes are cooking, heat olive oil in a pan over medium heat. Add the onion and sauté 2-3 minutes, add crushed garlic and chopped carrots, sauté until the carrots are tender, about 5-7 minutes.
3. Add the ground lamb, Cook until no longer pink, about 5 minutes. Season with salt, pepper, chopped rosemary and thyme. Add tomato paste, flour and stir.
4. Add beef broth and frozen peas. Bring to a simmer, reduce heat to low and cook, stirring occasionally, until sauce thickens.
5. When the potatoes are done cooking transfer them to a bowl. Add butter, milk, egg yolk, salt and pepper. mash the potatoes until smooth.
6. Preheat oven to 400F (200C).
7. Layer the meat mixture in a 13X8.5 (33X22cm) ovenproof dish. Spread the puree over the meat mixture.
8. Bake 20-25 minutes. or until mashed potato is golden brown.

Old Fashioned Tomato Pie
The baking temperatures are 400 for the crust, 375 for the complete pie. I think I hurried over those in the video.
Crust
1 1/2 Cups Flour (All Purpose or Bread Flour or a Mixture of the Two
1/2 Cup or 1 Stick Frozen Butter
1 Egg,, Beaten
1/4 Cup Ice Water, Approximately as Needed
Pie
2 Pounds of Ripe Tomatoes, Peeled and Sliced
1/2 to 1 Teaspoon of Salt
1 Cup Grated Parmesan or Romano Cheese
3 Cup of Your Favorite Cheese, Grated (I use Mozzarella, Cheddar and Jack
1/2 Cup Mayo and 1 Egg (Or 1/3 Cup Strained Greek Yogurt and 2 Eggs)
1 Medium Onion, Chopped or Sliced
6 Basil Leaves Sliced (Or More If You Like)
1/4 Teaspoon Dill
1/4 Teaspoon Garlic Powder
Black Pepper to Taste
