How to Make a Sweet Potato Pie | Sweet Potato Pie | Thanksgiving Recipe
Who's ready for Turkey Day??!! Try my sweet potato pie recipe below????????
2 cups sweet potatoes (mashed)
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/4 tsp + pinch salt (I used table salt)
1.5 Tbsp lemon juice (start small and add to taste)
1.5 tsp pure vanilla extract
1/3 cup half n half (room temp)
2 eggs (room temp)
1 Tbsp flour
4 Tbsp unsalted butter, melted
1 Deep dish pie shell (I used Mrs. Smith 9 deep dish flaky pie crust)
This recipe will only make 1 pie. You'll need 2-3 medium sized sweet potatoes (roughly 2.5 lbs). Bake potatoes at 425°f for 1 hour or until tender. Let cool completely then smash with a masher or fork. Measure out 2 cups of sweet potatoes in a glass measuring cup. Blend on medium speed for 4-5 minutes to get smooth creamy texture. Remove any potato strings from blender, then add other ingredients. Mix well to combine. Don't overmix after adding the flour. Bake on 350°f for 40 - 50 minutes. Pie will be slightly jiggly in the center. Let set for a couple of hours. To blind bake pie shell set oven to 375 and bake until crust reaches desired doneness. All ingredients should be at room temperature. Taste it as you make it. Enjoy!
All sweet potatoes are not the same, don't use bad potatoes ones.

Chocolate Peanut Butter Pie

Ingredients
Crust:
25 whole chocolate sandwich cookies, such as Oreos
4 tablespoons butter, melted
Filling:
1 cup creamy peanut butter
One 8-ounce package cream cheese, softened
1 1/4 cups powdered sugar
One 8-ounce package whipped topping, such as Cool Whip, thawed
Directions
For the crust: Preheat the oven to 350 degrees F. Crush the cookies until they're fine crumbs. Pour the melted butter over the top and stir with a fork to combine. Press into a pie pan and bake until set, 5 to 7 minutes. Remove from the oven and allow to cool completely.
For the filling: Beat the peanut butter with the cream cheese until smooth. Add the powdered sugar and beat until smooth. Add in the thawed whipped topping and beat until smooth, scraping the sides as needed.
Pour the filling into the crust, evening out the top with a knife or spatula. Chill for at least an hour before serving.

This recipe was in my Woman's World magazine. It is a DELICIOUS pie. The PITA (pain in the ass) factor is fair. It's just a little time consuming, so you have to pre-plan. You make your crust, then you bake the pie, it has to cool down, then you make up the mousse, and then you have to refrigerate it overnight.
I used the Elvis two pastry pie crust, which is the best pie crust ever, seriously.
2 pkg pie crust shell, deep dish (I would recommend using a deep dish10 instead of 9)
2 - 15 oz. can(s) pumpkin puree (divided)
1 - 14 oz. can(s) sweetened condensed milk
1 pint heavy cream (divided)
2 large eggs
1 1/4 tsp pumpkin pie spice (divided)
1/2 tsp ginger, ground
2 Tbsp sugar
1 - 3.4 oz pkg french vanilla instant pudding mix
1 1/2 c milk
1/8 tsp. salt
Directions
1. Position one rack in lower third of oven; place baking sheet on rack. Preheat oven to 425 degrees F. Coat 9 deep dish pie pan with cooking spray. Prepare crust according to directions. Fit into pie pan(s); trim & flute edge. Refrigerate.
2. In bowl, whisk together 1 can pumpkin, condensed milk, 1/2 C cream, eggs, 3/4 tsp pie spice & ginger. Pour into crust. Bake on hot baking sheet 20 minutes. Reduce oven temperature to 350 degrees F. Bake 25 - 30 minutes or until toothpick inserted into center comes out clean. Cool on rack.
3. Beat 3/4 C cream with 2 Tbsp sugar until soft peaks form; reserve. In bowl, whisk together pudding mix, milk, salt & remaining pie spice until smooth. Add remaining can of pumpkin; whisk until blended. Fold in reserved whipping cream. Spread on pie. Refrigerate overnight.

VANILLA WAFERS KEEBLER
CHERRY PIE FILLING (OR STRAWBERRY PIE FILLING)
MINI FOIL BAKE CUPS
Whip cream cheese, eggs, sugar, vanilla at high
speed until smooth. Place vanilla wafers
in baking cups, fill each cup with mixture. All
filling should fit in 12 muffin cups. Bake at 350
degrees for 20 minutes. Let cool, top with pie
filling.
Option: Use Oreo Thin Cookies on the Bottom
and Whipping cream for the topping with a
mini-Oreo cookie.
