How To make Lebkuchen Or German Honey Cakes
1 c Honey
2 ts Cinnamon
1 c Brown sugar
1 ts Ground cloves
1 Egg
2 ts Allspice
1 tb Lemon juice
6 tb Finely chopped candied citro
3 c Flour
1/2 ts Baking soda
1 1/2 ts Nutmeg
Clear glaze: 1 c Powdered sugar plus 2 tb
-water Put the honey and the sugar in a mixing bowl, and beat until blended. Add the egg and beat very well. Stir in the lemon juice. Combine the flour, baking soda, nutmeg, cinnamon, cloves and allspice, and sift them together onto a piece of waxed paper. Add to the honey mixture and beat well. Stir in the citron. Cover the bowl, and refrigerate for at least 6 hours (The dough will be much easier to roll out if it is well chilled.) Preheat thje oven to 350 degrees, and grease some cookie sheets. Place 1/2 of the dough on a lightly floured surface (keep the other half chilled). Roll the dough into a large rectangle about 1/4" thick, sprinkling flour as necessary to keep it from sticking. With a sharp knife, cut the dough into rectangles about 1-1/2 x 2-1/2-inches. Place about 1" apart on the prepared cookie sheets. Roll out the other half while you are baking the first batch of cookies. Bake for about 10 to 12 minutes, or until the edges are slightly colored. Remove from the oven, and gently lift the cookies off the sheets, and onto wire racks to cool While the cookies are still warm, brush with a Basic Clear Glaze, if you wish. Store airtight for at least several days, so the cookies can mellow. Basic Clear Glaze: Brush glaze on cookies as soon as they come from the oven to give them a clear, shiny tp, and to add a little sweetness. The glaze will harden as it dries, and the cookies cool. Combine the sugar and water and mix well, to dissolve any lumps,and to make a smooth runny glaze. Brush or spoon on cookies while they are still warm. Helen Jolly. -----

The usual ingredients for these are not usually easily available outside of Germany. Yes, one can buy Lebkuchen spice, etc., online, but my recipe below uses regular ingredients available in the USA.

Today we are making Grandma H’s Leb Cookies (traditionally known as Lebkuchen).This cookie is my husband’s favorite Christmas cookie and anytime it is the holiday season he is begging me to make these. His Grandma H would always make these and now I’ve taken over that role and tweak the recipe to his liking. Morgan’s Lebkuchen Recipe (adapted from Grandma H’s)
Ingredients:
½ cup butter
¾ cup sugar (or sweetener of your choice)
1 egg
⅓ cup molasses
1 teaspoon vanilla
⅓ cup cocoa
1 ⅓ cup AP flour (or substitute with GF flour of your choice)
½ teaspoon salt
⅓ teaspoon clove
⅓ teaspoon cinnamon
⅓ teaspoon allspice
⅔ teaspoon baking powder
(Optional) ½ cup citron and ⅓ cup nut meats (crushed nuts of your choosing, traditionally would be almonds)
Directions:
Cream butter and sugar together until light. Add egg, molasses, and vanilla, mix. Add remaining ingredients, cocoa, flour, salt, cloves, cinnamon, allspice, baking powder and mix. Stir in optional citron and nut meats. Chill dough for at least 15 minutes. Scoop dough with a 2 inch cookie scoop onto a parchment lined cookie sheet. Dust the bottom of a flat glass with cocoa powder and smash the cookies down until about ¼-½ inch thick (to your liking). Bake at 350 degrees F for 12-15 minutes, until the outside edge has crisped and inside is still fudgy. Ice with white buttercream frosting for extra sweetness.
(Optional) Chill dough until rollable with a rolling pin (dust with cocoa powder if needed) and then cut dough with cookie cutters or with a knife and then bake accordingly.

Episode 50: Medenjaki are a traditional Slovenian cookie; also known as Honey Spice Cookies. These delicious cookies come in many different shapes, however the heart-shaped ones are typically the most common, and are definitely my favourite. They are made around the holidays and given as gifts. Some of them are real pieces of art.
Many other European countries have similar Honey Spice Cookies and they are known as Pernik in the Czech and Slovak republics, Pierniczki in Poland, Medenki in Bulgaria, Piparkakut in Finland, Pffernneuse and Lebkuchen in Germany. Yum! Let’s get started...

3 eggs
1 cup sugar
1/2 cup butter
600g flour
200g honey
2 tsp’s baking soda
1 tsp lemon zest
1 tsp cinnamon
1 tsp ginger
1/2 tsp ground cloves
1/2 tsp nutmeg
???????? Beat eggs. Gradually add in sugar.
???????? Add butter mix until you have a pale yellow mixture. Add honey mix until well combined. Add baking soda
???????? Gradually add flour
???????? Finally add spices and lemon zest
???????? Mix until you get a nice soft dough
???????? Chill dough for at least 1 hour or overnight
???????? Sprinkle flour and Roll out dough between to pieces of clear plastic wrap.
???????? Place cookie cutouts on a baking sheet lined with parchment/baking paper. Place in a 350 degree oven and bake for 7 minutes.

LEBKUCHEN OR GERMAN HONEY BARS
German Honey Bars will keep 6 months in a tightly closed tin, especially if, as our grandmother’s used to say with a twinkle, “locked up”.
Heat slightly in a large saucepan:
1 1/3 cups honey or molasses
¾ cup sugar
Add and melt:
3 tablespoon butter
Sift together and add:
About 2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
Add:1/2 cup bleached almonds
¼ cup chopped orange or lemon peel
¼ teaspoon ginger
2 teaspoon cinnamon
1/8 teaspoon cloves
Bake about 25 minutes in a preheated 350 F (150 C ) oven.
