I am sharing one of my favorite, versatile for occasion, cookie recipes! It is not tooooo sweet....no nut and fruit....just a plain little delicious morsel of delight. Hurry on into the kitchen and let's get them made!!

CHRISTMAS GYPSY BISCUITS
1 STK BUTTER ( SOFTENED)
1 C SUGAR
1 EGG
2 C SELF RISING FLOUR
1 C FLAKED COCONUT
Cream the sugar and butter.
Add 1 egg and mix well
Mix in the flour, then, add the coconut.
The mixture will be crumbly...you will need to press it and form a ball that sticks together.
Shape small portions into a ball, flatten with a fork and sprinkle with sugar. I use colored sugar according to the season or occasion.
Bake on a baking sheet sprayed with cooking spray , or, use parchment.
375/ 12-15 minutes. Cool on a rack. Makes about 4 dozen small cookies

Low Carb Christmas Cookie Cutter Sugar Cookies & Icing, Keto

Sugar Cookie Ingredients:

1 3/4 C sifted blanched Almond Flour
1/4 C Coconut Flour
2/3 C Sweetener of choice (I used Lakanto & Swerve}
1/4 tsp fine Sea Salt
1/2 C softened unsalted butter (I used Kerry Gold)
2 Tbl Cream Cheese
2 Tsp pure Vanilla Extract
1/4 Tsp Almond Extract

Icing:

1/2 C powdered sugar sweetener of choice
1 1/2 Tbl of Heavy Whipping Cream or Coconut Cream
Lemon Juice and/or Water to desired consistency

The brown sugar cookies are from my mother’s side of the family.
They were very Swedish and this recipe was passed down throughout the years. A family favorite!
