How To make King Ranch Casserole
1 Fryer chicken
1 md Onion chopped
3/4 c Chopped celery
1 ts Salt
1 cn Cream of chicken soup
1 cn Cream of mushroom soup
12 Tortillas cut in pieces
1 Chopped green pepper
1 cn Ro-tel tomatoes
1 c Sharp cheddar cheese
Boil chicken, onion, celery & salt until chicken is tender. Remove chicken from broth and cool, remove bones, chop chicken. Boil broth down to 1-1/2 c & add soups & mix. Preheat oven to 350 degrees. Arrange tortillas in pieces in bottom of buttered 8 x 12 in casserole with tortillas pieces. Cover tortilla pieces with chicken chunks. Sprinkle with green peppers. Cover with Ro-tel tomatoes. Pour soup mixture over all of it. Cover with foil & bake 35 to 40 min. Remove from oven and remove foil. Sprinkle with cheese, return to oven, cook til cheese is bubbly Serve hot.

King Ranch Chicken Casserole is a delicious Tex-Mex dish that makes its way to parties and potlucks, where I am from. The original recipe calls for cans of cream of chicken, cream of mushroom and Rotel. I like to make my own cream sauce that sort of combines all of those flavors together. For extra spice you can substitute the poblano pepper for jalapeno peppers.
INGREDIENTS
1 poblano pepper
1 onion
3 Roma tomatoes
1 pint of button mushrooms
4 tbls unsalted butter
4 tbls all purpose flour
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground black pepper
1 1/2 tbls granulated chicken bullion
3 to 3 1/2 cups whole milk
1 cup (8 oz) sour cream
3 to 4 cups sharp cheddar cheese (or cheese of your choice)
18 corn tortillas (I used 24 in the video, but I think 18 works best ????)
9 x 13 Baking dish

1 lb boneless skinless chicken breast, cubed
4 tbs butter
1 green bell pepper, chopped
1 onion, chopped
1 can 10 1/2 oz cream of mushroom soup
1 can 10 1/2 oz cream of chicken soup
2 cans 10 oz each diced tomatoes and green chilies
8 oz mexican style shredded cheese
10 corn tortillas, torn into bite size pieces
Bake 325 for 40 mins

King Ranch Casserole - Delicious Southwestern Comfort Food!
King Ranch Casserole is classic Texas comfort food. This southwestern dish is very simple, and very delicious.
No one know the origins of this casserole. It is not tied to the massive 825,000 acres King Ranch in South Texas. It seems related the Mexican dish chilaquiles. It was popularized using canned ingredients in the 1950s and every Texan family has a slightly different variant. This particular recipe comes from my good buddy Aaron Lain and his mother.(thanks for sharing)!
