How To make Khal Bi (Korean Barbecue Meat)
4 lb Short Ribs
1/2 c Shoyu
1 tb Sugar
1 ds Black pepper
2 ea Cloves Garlic;finely chopped
1 tb Honey
1 ea 1" cube ginger;finely sliced
2 ea Stalks green onion;fine chop
1 ts Sesame oil
Slice mean 1/8 inch away from bone, leaving bone attached. Crisscross meat to break fivers and allow marinade to penetrate. Combine sauce ingredients and marinate meat for a minimum of 1 hour. Broil or barbecue to desired doneness.

Galbi(갈비) is a type of Korean barbeque.In it's original and complete and purest form,galbi consists of beef short ribs that are butterflied off the bone and marinated in a sweet soy sesame garlic marinade and cooked on a grill over coals.The term galbi literally means ribsbut,when used alone without additional qualifiers in a culinary context,it is usually mean ast his dish as just described;technically,the long form could be something likesogogi(beef) yangnyeom(sauce/marinade)(as here) galbi (ribs) gui (grilled)though nobody would ever refer to its as such.

These delicious Korean style short ribs known as Kalbi are marinated overnight in a delicious sweet fruit marinade and grilled to perfection for an amazing sweet tender taste.

Ingredients for this Recipe:
• ½ peeled yellow onion
• 5 large garlic cloves
• 1 teaspoon fresh ginger, trimmed
• 1 cup water
• 1 cup soy sauce
• ½ cup packed light brown sugar
• 3 tablespoons mirin
• ¼ cup honey
• 3 tablespoons sesame oil
• 2 teaspoons sesame seeds
• 1 peeled and seeded Asian pear
• 1 peeled and seeded Fuji apple
• ½ peeled kiwi
• ¼ cup sliced green onions
• ½ teaspoon ground pepper
• 3 pounds kalbi cut short ribs
Serves 4
Prep Time: 20 minutes
Cook Time: 10 minutes
Marinating Time: 12 hours
Procedures:
1. Add all of the ingredients except for the ribs to a blender and blend on high speed until smooth.
2. Transfer the mixture to a plastic zip bag and completely submerge the ribs in the marinade.
3. Marinate in the refrigerator for 12 hours or overnight.
4. Add the ribs right from the marinade to a hot grill in between 450° and 550° and cook for 3 to 4 minutes per side or until dark grill marks have formed.
5. Remove from the grill, garnish with sesame seeds and sliced green onions and serve right away.
CHEF NOTES:
• You can also add in 1 teaspoon of salt and 2 tablespoons of regular sugar to make the marinade more intense in flavor.
• The marinade will last up to 4 days if you choose not to marinate the short ribs right away.
• I like to move the marinated ribs around in the bag every 4-6 hours to make sure they are getting exposed to the marinade.
• Don’t marinate the ribs for more than 24 hours

So I jumped on the chance to make one of my favorite winter stew - galbitang. Galbitang is made with my favorite cut of beef - short ribs. Kimbuksoon Keun Nambijip (김북순큰남비집) - First up is one of the most common and popularly loved Korean foods, Kimchi Jjigae (Kimchi Stew). They use ripe kimchi that has a beautiful flavor and acidity to give maximum flavor. From there, you can choose your meat of choice.

Pyeongyang Myeonok (평양면옥) - Next up on this ultimate Korean food tour we’re eating a classic version of Naengmyeon (Buckwheat Noodles) at one of the most famous restaurants to eat it at in Seoul.

Sigol Gamjaguk (시골감자국) - The first time I tried Gamjatang (Bones and Potato Stew), it immediately became one of my favorite dishes in South Korea. The bones are cooked until tender and the soup is loaded with chili flakes, perilla leaves, and perilla seeds.

Taegeukdang Bakery - In between eating we took a quick break to meet the CEO of Korea Tourism Organization at the oldest bakery in Seoul, serving traditional Korean pastries and sweets.
Gangwon-jeong (강원정) - One of the most soothing of all Korean foods is Samgye-tang (Ginseng Chicken Soup). The chicken is cooked until fall apart tender and the rice inside absorbs all the ginseng and chicken juices as it cooks.
Price: 17,000 KRW ($12.73 USD) per bowl
Pro Soy Crab - Finally, one of the extreme delicacies of Korean food is Ganjang Gejang (Soy Marinated Crab). The blue crabs are raw and marinated in sweet soy sauce. The roe is so gooey and melts in your mouth.
