How To make Key Lime Coconut Cookies
1 c Sweetened condensed milk
4 tb Key lime juice
4 tb All-purpose flour
2 c Unsweetened coconut flakes
4 tb Sugar
Preheat oven to 350 degrees F. Grease 2 baking sheets. Combine the condensed milk, Key lime juice, and flour in a medium bowl. Stir in the grated coconut and then the sugar. If using sweetened coconut, taste the mixture before adding the sugar. Add the sugar only if you think it is necessary. The cookie should have a tangy flavor from the Key lime juice. Drop teaspoons of the mixture onto a baking sheet, leaving 2 inches between each cookie; they will spread while

Great cookie to serve/bring to BBQs

Ingredients:
Cookies~
1 1/2 cups of flour
1/2 tsp of baking soda
1/2 tsp of salt
1 stick (1/2 cup) of room temperature butter
1/4 cup of sugar
1/4 cup of brown sugar
1 room temperature egg
1/2 tsp of vanilla extract
zest and juice of one lime
1 cup of white chocolate chips...you can you regular chocolate chips if you prefer
Icing:
1 cup of powdered sugar
1 tsp of lime zest
1 to 3 TBS of lime juice...add slowly until you get the consistency that you like
Bake at 375 on a lightly greased pan or on silicon mats for 8 to 10 minutes
cool then top with icing!

You are going to love these Coconut Key Lime Snowball Christmas Cookies! Using the basic cookie dough recipe and then add a few additional ingredients and you have a wonderful refreshing coconut lime cookie. Enjoy!
Recipe
2. Cups of premade basic cookie dough
2 tablespoons of flour
1/2 cup of finely chopped almonds
1/2 cup of sweetened shredded coconut
2 tablespoons of lime juice
1-2 tablespoons of lime zest
1/2 cup of powdered sugar (I used Swerve for less calories)
2 teaspoons of lime juice
Green sprinkles optional
Icing: in a bowl whisk together the powdered sugar and lime juice to a light consistency like honey.
Preheat oven to 375 degrees Fahrenheit.
With cookie dough at room temperature, fold in the flour, chopped almonds, shredded coconut, lime juice and lime zest. Make sure everything is well incorporated.
Take dough and roll into small balls and place on ungreased cookie sheet 1 inch apart. I like using a silicon baking mat.
Bake on center shelf for 15 minutes. Remove from oven and place on cooling rack. Let cool for 10 minutes before adding icing.
Glaze each cookie with the icing, sprinkle with coconut and optional sprinkles.
This amount make about 2 dozen cookies.

Ingredients:
- 1 cup Butter
- 1½ cup Sugar Granulated
- 1 Egg Large
- 1 tsp Vanilla extract
- ¼ tsp Lime extract
- 2 tsp Lime juice
- 1½ tbsp Lime zest
- Neon green gel food coloring Few drops
- 2 1/2 cups Flour All-purpose
- 1/2 cup Coconut Shredded
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1 cup Sugar Additional granulated for rolling cookie dough balls
Method:
- In a mixing bowl, cream together butter and sugar until light and
fluffy.
- Mix in the egg, vanilla extract, lime extract, lime juice, lime zest,
gel coloring until smooth.
- In a separate bowl, whisk together the flour, shredded coconut,
baking powder, baking soda.
- Dump this dry mixture into the wet mixture and mix until just
combined.
- Scoop out small portions of the dough and shape them into balls. - Roll them in a plate filled with granulated sugar. Place them on a
cookie tray, lined with parchment paper
-Then, bake at 180 degrees for about 20 to 25 mins
- Allow these cookies to cool down and enjoy!
