How To make Almond Coconut Cookies
2 1/4 c all-purpose flour
1/2 ts baking soda
1/4 ts salt
3/4 c light brown sugar
1/2 c white sugar
3/4 c salted butter
2 lg eggs
2 ts pure vanilla extract
1/2 c sweetened shredded coconut
1 c chopped raw almonds, --
: unsalted 1 c chopped dates
1/4 c sweetened shredded coconut
: for topping Preheat oven to 300 degrees. In medium bowl mix together flour, soda and salt with a wire whisk and set aside. In a medium bowl, combine brown sugar and white sugar with electric mixer at medium speed. Add and mix butter until it forms a grainy paste. Add eggs and vanilla and beat until smooth. Add flour mixture, coconut, almonds and dates. Blend on low speed until just combined. Do not overmix. Drop by rounded tablespoons onto ungreased baking sheets, 2 inches apart. Sprinkle tops lightly with reserved coconut. Bake 25 minutes or until bottoms turn golden brown. With a spatula, transfer to cool, flat surface. Gluten Free Almond Pistachio Cookies, No Butter No Oil! | How To Bake!
Almond Pistachio Cookies, Gluten free and without oil or butter!
Quick and delicious cookie recipe! mixed and baked in 30 minutes!
Dough:
90g (3/4 cup) Pistachios Chopped
120g (3/4 cup) Almond flour
60g (1/3 cup) Powdered sugar
2 Egg whites
Topping:
+-30g (1/4 cup) Pistachios Chopped
+-75g (1/3 cup) Powdered sugar To dip the cookies in
Process:
-Preheat oven 175C / 347F.
-Chop pistachios.
-Add pistachios to a bowl and mix with almond flour.
-Sieve powdered sugar, add to the mixture.
-Beat 2 egg whites, add to mixture.
-Mix everything until dough has formed (should be a littly sticky).
-Divide into +- 15 little balls of 20g each.
-Roll them into powdered sugar, place on baking tray.
-Make a dent, use your finger.
-Add extra pistachios on top.
-Bake for 10-12 minutes, 175C / 347F.

These soft and chewy macaroon style cookies have such a great texture. With almond and coconut and just a little lemon zest they are full of flavour too. A glacé cherry on the top of each one adds an extra little treat too. They are so easy to make and are perfect with tea, or coffee.
