How To make Key Largo Cake
CAKE:
3 oz Mixed fruit jello
1 1/3 c Sugar
2 c Flour
1/2 ts Salt
1 ts Baking powder
1/2 ts Baking soda
5 Eggs
1 1/4 c Cooking oil
3/4 c Key Largo liqueur *
GLAZE:
1/2 c Powdered sugar
1/2 c Key Largo Liqueur *
TOPPING:
12 oz Cool Whip
1 cn Mixed tropical fruit, drain
* any tropical flavored liqueur ~------------------------------------------------------------------------- Remove 1 Tbls of jello powder and set aside. Mix sugar, jello powder, flour, salt, baking powder, and baking soda. Add oil, eggs, and liqueur. Beat 3-4 minutes. Grease and flour a 9 x 13 pan. Bake at 350?F for 25 - 30 minutes. Cool and poke holes in cake. Mix powdered sugar and liqueur. Pour evenly over cake. Refrigerate. Cover with Whipped topping . Garnish with a can of mixed tropical fruit, well drained.

1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg

3 large eggs use 4 if they're small
2 1/2 to 3 cups pureed fruits adjust fruits to your liking
1 tbsp lemon zest

burn sugar or browning add as much or as little as you like.
if your batter is too dry add alittle wine.
pre-heat oven to 285°F bake for 1 1/2 to 2 hours every oven cooks different so keep checking for doneness.

Trini Black Fruit Cake - Caribbean Rum Cake - Episode 466
It's never to early to start soaking your fruits in preparation for making your fruit cake for Christmas.
Christmas is not complete in Trinidad or the Caribbean without a Black Fruit Cake. This cake is soaked in Brandy and other spirits after it's done baking and while still hot to give it that delicious moist texture. I promise you this is way better than my other recipe and yes this recipe can be doubled. In this recipe I used up all of the pureed fruit in the cake.
1/4 cup raisins
1/4 cup cherries
1/4 cup prunes
1/4 cup mixed peel
1/4 cup cherry brandy
1/2 cup spiced rum or brandy
1/4 cup creme de cassis
1/4 cup white rum
---------
2 cups pureed fruit or all of the pureed fruit
1 cup soft unsalted butter or 2 sticks or 16 tbsp. or 1 block
1 1/4 cup sugar
3 large eggs
2 cups flour
2 tsp cinnamon
1 tsp nutmeg
1/2 cup Browning
Zest from 1 lime
Zest from 1 orange
2 tsp baking powder
2 tsp mixed essence

To soak the cake
1/2 cup Hennessey brandy or any dark rum of your choice
2 tbsp white rum
2 tbsp cherry brandy or crème de cassis

I think this the best vanilla cake recipe out there as it has a buttery and perfectly even crumb that holds up well on its own but will practically melt in your mouth when you take a bite. I've updated my vanilla cake recipe for an even more tender crumb and foolproof bake no matter what climate or season you're in!

Ingredients
Cake
2 ½ cups cake flour
1 cup granulated sugar
½ cup brown sugar
1 box instant vanilla pudding 3.75 oz package
2 tsp baking powder
1 tsp salt
½ cup unsalted butter softened
½ cup canola or vegetable oil
½ cup whole milk
4 eggs
½ cup Bacardi Silver Rum
½ cup Key Lime Juice
2 tsp vanilla extract
Confectioner’s sugar optional garnish
Key Lime Syrup
½ cup butter
¼ cup Key Lime Juice
1 cup granulated sugar
½ cup Bacardi Silver Rum
Instructions
Cake
1. Preheat oven to 325°. Grease and flour 10” tube or 12-cup bundt pan.
2. In a large mixing bowl, add the cake flour, both sugars, pudding mix, baking powder, salt, butter, and oil. Mix at medium speed with an electric mixer until everything is combined and with a sandy texture.
3. Beat in the milk. Follow with the eggs, one at a time.
4. Stir in the rum, key lime juice, and vanilla extract.
5. Pour the batter into the prepared pan and bake for 50 – 60 minutes or until baked through and a cake tester comes out clean when inserted.
6. Remove the cake from the oven and let cool slightly while you prepare the key lime syrup.
7. With the cake still in the pan, use a long skewer to poke holes all over the bottom of the cake. Pour about a ¼ cup of the syrup over the cake. Allow it to soak in and repeat it again as needed until all the syrup is used.
8. Loosely cover the pan with plastic wrap and allow the cake to cool completely and absorb all the syrup by sitting at room temp overnight.
9. Loosen the edges of the cake before inverting onto the serving plate. Garnish the cake, if desired, by lightly dusting it with confectioner’s sugar and key lime slices.
Key Lime Syrup
1. Melt butter in a saucepan. Stir in juice and sugar. Boil for 5 minutes, stirring constantly. Remove from heat. Stir in rum.
Notes
***If the cake won’t release don’t force it! Place the cake in the oven and turn it on to 350. Warm it for 10 minutes to soften the syrup. Remove the cake from the oven and tip it onto the serving plate. If your oven preheats with a red-hot upper element, place the cake on a lower rack and tent with aluminum foil to protect it. *** ***You can use fresh or bottles of key lime juice. Key Limes weren’t in season when I made this cake, so I used Nellie & Joe’s Key West Lime Juice.***
