Eggplant appetizers always have a lot in common. Whether it's babaganoush, Greek meze, eggplant caviar, whatever, there's likely to be garlic. So what? There are no fools. Every cuisine in the world knows that eggplant and garlic are a win-win combination. And you know another win-win combination? Roasted eggplant and cilantro.
I know that there are people who are extremely negative about cilantro. You and I don't understand each other, but since the conversation has led here, you can replace cilantro with parsley, or better yet, garlic greens.
???? Ingredients:
✔️ 2-3 eggplants (2 large or 3 medium)
✔️ 1 red pepper
✔️ 3 garlic cloves
✔️ 30 ml extra virgin olive oil
✔️ 3 sprigs of coriander
✔️ 1/2 tsp. salt
✔️ freshly ground black pepper
????How to cook:
1️⃣ Preheat the oven to 240 °C / 465 °F.Pierce the eggplants with a wooden skewer. Place the eggplants and peppers in a baking dish and place in the oven. Bake for 20 minutes.
2️⃣ At this time:Peel the garlic and grate it into a small bowl. Finely chop the cilantro and add to the garlic. Add 1/2 tsp salt and 30 ml extra virgin olive oil. Stir and set aside.
3️⃣ After 20 minutes, take the mold out of the oven, flip the eggplants and peppers to the other side, and place in the oven for another 10-15 minutes. Leave to cool.
4️⃣Remove the skin from the eggplant and peppers (also separate the peppers from the seeds), and put them in a mixing bowl. Mash with a fork until smooth. Pour dressing and mix well. Pepper with freshly ground black pepper, taste and add salt to taste, if necessary.

6-7 pounds small to medium eggplants
½ cup Kosher salt
4 cups white vinegar
8 cups water
2 tablespoons dry oregano, or to taste
½ teaspoon black pepper, or to taste
¼ - ½ teaspoons hot pepper flakes
5 cloves garlic, sliced, or to taste
2½-3 cups extra virgin olive oil
Finish with salt to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?

1) Mediterranean Pasta - Each mouthful an experience! Pasta in a Cheesy Bell pepper Sauce, Mediterranean Style. Licoidali is a variety of Italian pasta that’s quite similar to the rigatoni. It’s larger in size and the ridges help retain the sauce for a better eating experience. This recipe has a tomato and bell pepper sauce with Pecorino cheese for an amazing flavour. It's very cheap to make, incredibly delicious and perfect to bring to the table on many occasions. Great for vegans and vegetarians too! (Minus the anchovies) It's usually a great summer dish when the eggplants are in season, and I'm big on cooking seasonal but of course these days they are available all year round. The flavours of this recipe are intense because of the fried eggplant which is the hero of the dish. They are usually fried in seed oil but as we all now know, seed oils are very unhealthy so I opt for virgin olive oil. Olive oil doesn't heat as hot as seed oils but still hot enough to brown the eggplants without smoking. I prefer to use the slated capers as they hold a stronger flavour, you can however use the capers you like. Mixed with the olives and the anchovies, this dish comes to life. Cook this rigatoni alle melanzane today and bring it to the table for the people you love.
3) Spicy Eggplant in Olive Oil, a delicious Italian antipasto that any eggplant lover will enjoy. It’s basically spicy pickled eggplant that’s often used as an antipasto, perfect with cold meats or cheeses. This recipe is an old fashion style, and very versatile. Use it for toasted sandwiches or panini. 6) Spaghetti Melanzana Fritta is a delicious and easy to make eggplant pasta dish. The eggplant is sliced and then fried in olive oil until golden brown. It is then cooked with a little water and garlic until it breaks apart. It’s then then tossed with the spaghetti for a thick tasty sauce. This dish is perfect for a quick and easy weeknight meal. The eggplant gives the pasta a slight sweetness, and the fried caramelised flavour brings it to a whole new level. The eggplant part can be made ahead of time and reheated, or it can be served immediately. This will also intensify the flavour. Either way, it is sure to be a hit with your family and friends. A cheap to make, meatless pasta meal. So go ahead and give Spaghetti Melanzana Fritta a try! You won't be disappointed.

5 eggplants
3 tbsp olive oil
2 tsp salt
2 cup chopped onion
1 chopped garlic
2 cup jalapeno pepper
4 tomatoes
violet basil
1 cup chopped parsley
sugar
dill
PREPARATION

1.Partly peel the eggplants and cut it in the middle with a knife.
2. arrange them in the pan. Grease 5 eggplants with olive oil. Sprinkle the salt on the eggplants.
3.Bake 450 °F (230 °C) 20 minutes.
4. Meanwhile, Put 2 tablespoons olive oil in a pan, 2 cups chopped onions, 1 chopped garlic and mix.Then add 2 cups jalapeno pepper.
5.Add 4 tomatoes and 3 violet basil mix and leave on for 10 minutes.
6.After cooking add 1 cup chopped parsley, 1 teaspoon salt and mix.
7. Sprinkle the sugar on the eggplants. Stuff the filling equally between eggplants.
8.Bake stuffed eggplants at 450 °F (230 °C) for 20 minutes.
9. Sprinkle the dill on the eggplant and enjoy it.
