How To make Italian Sausage Spaghetti Sauce
2 lb Italian sausage
1 c Dried parsley
1 tb Garlic, finely chopped
1/2 c Olive oil
1 ts Red cayenne pepper
1 c Plain flour
3 tb Lea & Perrins
2 c Onions, finely chopped
1 c Celery, finely chopped
1/4 ts Dried mint
1/2 c Bell pepper, finely chopped
3 c Tomato sauce
2 c Water
1 x Salt, to taste
2 c Dry white wine
Cut Italian sausage into 2-inch lengths. Brown sausage off in olive oil (about half cook it), remove from pan and put aside, Add flour to oil that was used and make roux. Add onions, celery, and bell pepper. Stir and cook until tender or clear. Add water and stir until smooth. Add wine (you may wish to experiment with the amount of wine used, 2 cups is too much for some tastes), parsley, and garlic. Pour in red pepper, Lea & Perrins Worcestershire sauce, dried mint, and tomato sauce. Stir real well. Bring to a bubbly boil and add salt, to taste. Add sausage. Bring back to a boil. Turn heat down to simmer. Cook for about 3 or 4 hours. Serve over spaghetti topped with cheese. From Justin Wilson's "Outdoor Cooking With Indoor Help"

Here is my recipe for an easy Italian meat sauce. This meaty sauce is rich from all the ground sausage and is loaded with garlic. If garlic isn’t your thing you can always reduce the amount used. Either way, your whole house will smell like an Italian Trattoria … and that’s a good thing.
Ingredients:
2 Tbsp Olive Oil
1 pound Italian Sausage
1 pound ground beef
1 small onion, diced
5-7 cloves garlic, half thinly sliced and half minced.
1 28oz can crushed San Marzano tomatoes
12 oz can tomato paste
15 oz can tomato sauce
½ C White Wine
1 tsp dried basil
1 tsp dried Oregano
1 tsp dried Rosemary
1 tsp dried Thyme
1 tsp Salt
¼ tsp Black pepper

Today I'm sharing my yummy spicy sausage pasta recipe. This sausage pasta is one of the most versatile, easy sausage pasta recipes I have ever made. While it's a great sausage recipe, the sauce is so flavorful, it can go with almost anything added to it! If you're looking for recipe with sausage, this is perfect for you. If you want a sausage noodles recipe, this might also be something you'll enjoy.
This pasta recipe can be made with Italian sausage, tofu or veggies. It's quick, easy and a perfect weeknight pasta recipe!
Tomato paste substitute:
• Blanch, peel and puree 2-3 ripe tomatoes (1 cup puree)
• If using canned tomatoes, puree 1 cup
• Reduce the puree to half. Should take about 30 minutes
Ingredients:
2 servings pasta
6 sausages
1 small onion
8 small cloves garlic (2 tbsp garlic)
1 tbsp red chilli flakes
1 tsp dried oregano
1 tsp dried parsley
1/4 cup tomato paste
1/4 cup water
1 cup pasta water
1 tbsp butter
Olive oil as needed
Salt as needed

1/2 lb sweet italian sausage
1/2 lb hot italian sausage
1 tsp worcestershire sauce
1/4 cup dry red wine
herbs de provence
red pepper flakes
salt/pepper/garlic/onion powder
2 pinches of sugar
fresh basil
2 tbsps tomato paste
1 package spaghetti
2 tbsps butter
parmesan cheese
fresh chopped parsley
Directions:
Begin by prepping your veggies. Heat large pot over medium heat and begin cooking your ground meat until no longer pink. Add in onion and pepper and sweat for 5 minutes. Season generously. Add garlic and incorporate. Next, add in tomato paste and mix to combine. Deglaze the pot with a bit of red wine or beef stock - bring to a simmer. Add in crushed and chopped tomatoes, along with tomato sauce. Add Worcestershire sauce and Mix to combine and begin seasoning to taste. Add sugar as needed to balance acidity. Add basil leaves and cover for 30-60 minutes on low - stirring occasionally. Cook pasta to package instructions, drain, and add 2 tbsps butter. (always salt pasta water). Add sauce to your noodles based on your preference and garnish with fresh parmesan and parsley.

SAUSAGE AND PEPPERS INGREDIENTS
6 Sweet Italian Sausage Links or hot or both.
1 lb. Bag Mini Sweet Peppers
1 or 2 Spanish Onions (can sub other onion types)
4 Cloves Garlic (2 for Marinara Sauce and 2 for Peppers and Onions)
Extra Virgin Olive Oil
1 tsp. Fresh or Dry Oregano
1 28 oz. can of Whole Peeled Plum Tomatoes ( San Marzano preferred)
Fresh Basil and Fresh Parsley
Pecorino Romano Cheese
Salt and Pepper to taste
Cooking Instructions
Start on Marinara Sauce - Marinara Sauce Recipe
Add EVOO and Brown Garlic
Add tomatoes
Add basil and Parsley
Season with Salt and Pepper
In another pan add EVOO and brown sausage on low to medium heat
While the sausage is cooking you can clean
and cut peppers and onions and add to the pan
Put water on for pasta
On medium heat, you want to cook the peppers about 30% and add garlic
Once the peppers and onions are starting to caramelize you can deglaze pan
With ½ cup of water and reduce all the way down.
When sausage is brown on all sides remove from the pan and cut into smaller portions
Add sausage to the pan and cook on low for a few minutes
Add pasta in water and cook.
Drain pasta, add back to the pan and add mix in some marinara sauce.
Coat plate with marinara sauce, twirl pasta, and place on the plate over the sauce.
Add pepper, onions, and sausage and top with marinara sauce, cheese, and parsley
You are done... Nice Job : )

Preparing Italian Sausage for the Spaghetti Sauce!
This is how I prepare Italian sausage for the spaghetti sauce or Sunday Gravy as my grandmother used to call it.
IMPORTANT NOTE: I no longer poke the sausages. I have since learned the error of my ways. Don't poke them. Keep the juices in! :-)
Boil the sausage in water for 30 - 40 minutes, then brown, then add to sauce and cook for 3-4 hours. The sausage comes out so tender you can cut them with a spoon!
