How To make It's a Snap!
2 Egg whites; room temp
1/8 ts Cream of tartar
1/2 c Sugar
1 ts Vanilla
1/2 ts Ginger
1/2 ts Cinnamon
2 Gingersnap cookies; crushed
Preheat oven to 250 F . Grease cookie sheets. Beat egg whites in mixer bowl at medium speed until frothy. Add cream of tartar, beat until soft peaks form. Add sugar, 2 tablesspoons at a time, beating 30 seconds after each addition. At high speed, beat until stiff, 1 minutes more. Beat in vanilla, ginger and cinnamon. GENTLY fold in cookie crumbs. Drop by teaspoonsful onto prepared cookie sheet. Bake 45 minutes until dry to the touch. Turn off oven, let meringues cool in oven, 2 hours.Makes 20 cookies. -----

Snap peas with pistachio dukkah

Ingredients:
Snap peas
Pea tendrils or pea shoots (optional)
1 lemon
1 c pistachio
2 tbsp coriander seed
1 tsp cumin
2 tsp flakey salt
2 tsp Aleppo pepper
Direction:
Clean snap peas by removing the stem from the top and optionally the stringy seam.
Clean pea tendrils by removing the leaves from the bottom tougher ends and leave the thinner tender end intact it’s good eats. Reserve
Preheat oven to 350°f/176°c
Toast pistachio and coriander seed for around 8 minutes
In a food processor pulse coriander seed until coarse, add zest from 1 lemon, flakey salt, cumin, Aleppo, and pistachio. Pulse once more until everything is the same size but still fairly chunky
Preheat a pan and add a few tablespoons of oil, add snap peas in a single layer to blister evenly. Add a pinch of salt. Once you have good color on one side give the pan a shake and blister once more. Add pea tendrils and season lightly once more. Add a big squeeze of lemon juice and toss the pan to lightly wilt the pea tendrils. Plate up and top with a generous handful of dukkah

40g Demerara Sugar
2 Tablespoon Golden Syrup
3 Teaspoons Ground Ginger
50g Unsalted Butter
1/2 teaspoon Baking Powder
1/2 teaspoon Bicarb of soda
