How To make Icelandic Three Grain Brown Bread
1/2 c Brown sugar, packed
1/2 c Butter, softened
1 c Rolled oats
1 c Dark rye flour
2 c Whole wheat flour
2 c All purpose flour
1 t Salt
4 ts Baking soda
2 1/2 c Buttermilk
This soda bread recipe comes from an Icelandic farmhouse. It's dark,delicious, and full of wholesome grains. It's also excellent toasted. Preheat the oven to 350F. Grease two 9x5x3 inch loaf pans. In a large bowl, cream together the brown sugar and butter. Mix the rolled oats,rye flour, whole wheat flour, all purpose flour, salt, and baking soda together in another bowl, then add the creamed mixture along with the buttermilk. Mix until well blended. Divide the mixture between the two pans and smooth the tops. Bake 1 hour or until a wooden skewer inserted in the center comes out clean. Turn out of pans and cool on racks. Makes 2 loaves. Organic Bread Baking Series: Rye & Whole Wheat Bread Recipes - just like my Grandma’s ❤️
Homemade, Organic, Nutritious, Freezer Friendly...
Rye and Whole Wheat Bread Recipes
Rye / Whole Wheat Bread Ingredients:
-5 cups dark rye or whole wheat flour
-5 cups all purpose flour
-2 packs instant yeast
-3 tbsp salt
-4 cups lukewarm water
-2 tbsp extra virgin olive oil
-Mix it for 8 min (I used stand mixer)
-Let the dough rest and rise 40 min
-Stretch and fold
-Repeat this cycle3-4 times more
-Shape and transfer the dough on the baking sheet
-Let it rest & rise for 90min
-Score the top
-Preheat oven to 450F and bake for 30min.
-Reduce the heat to 400F and bake another 30min
-Wait till it completely cools down before slicing (ideally wait at least 2 hours)
-To freeze: Wait overnight till it completely settles. Then slice and freeze in freezer bags
