Ingredients:
3 cups chicken, cooked and chopped
8 oz water chestnuts, (1 can), drained, sliced, and divided for topping
4 oz pimentos, (1 jar), drained and sliced
2 cups celery, chopped
10 oz cream of chicken soup, (1 can)
1 cup cheddar cheese, shredded, divided
1½ cup mayonnaise
1 tbsp lemon juice
1 tsp salt
½ tsp pepper
½ cup almond flakes, for topping
2 tbsp chop cilantro
⬇️ How to make Hot Chicken Salad Casserole ⬇️
0:25 Preheat the oven to 325 degrees F.
0:29 Combine chicken, celery, soup, half of the cheddar cheese, mayonnaise, half of the water chestnut, lemon juice, salt, and pepper in a large bowl. Mix well.
1:01 Transfer the mixture into a 9 by13-inch baking dish and spread evenly.
1:04 Bake for 35 minutes, uncovered.
1:06 Sprinkle the remaining cheese, half of the water chestnuts, pimentos, and almonds. Then bake for 10 more minutes.
1:18 Serve and garnish with chopped cilantro!

Easy ????????Hot Chicken Salad Recipe topped with Chips/Cheese (Chicken Salad Casserole)
Hot Chicken salad is something I never had until well into my 20s. I've never looked back. This is creamy, delicious and the perfect main entrée to any meal. I serve with a potato dish and vegetables... you do whatever works for you. It is certainly a #jackieswindowworthymeal. My understanding is that Hot Chicken Salad used to be more popular; who made it go away?!
After several bland attempts, I have finally come with this recipe (tested and LOVED)-
Recipe:
3 cups cooked chicken breast (I prefer rotisserie/leftovers for ease)
1 cup (4 stalks) diced celery
Sauce:
1.5 cup mayo
1.5 tbsp ranch seasoning
1.5 tbsp worchecshire
1.5 tbsp minced onion
0.5 tbsp lemon juice
1 tsp garlic salt (or for less salt, garlic powder)
1 tsp onion powder
1.5 cups shredded sharp cheddar (estimate)
1.5 cups ruffled potato chips (estimate)
mix sauce ingredients well. Then add to chicken and celery. Place all in a greased 8*8 pan. Cover with ruffled potato chips. Cover again with shredded sharp cheddar. I don't measure chips/cheese. Estimation used above in recipe. Just make sure to cover.
Bake at 350 for 30 minutes
