INGREDIENTS FOR THE BRAISING
- 5 lb of beef parts (Boneless beef shank, beef heart, beef tripe)
- 4 slices of Kaempferia galanga, also known sand ginger (Amazon Link -
- 2 tsp of Sichuan peppercorn
- 2 pieces cloves
- 1 piece of cinnamon stick
- 1 piece of black cardamom
- 1/2 tsp of fennel seeds
- 2 pieces of star anise
- 2 pieces of bay leaves
- a small piece of Galangal
- 3 pieces of hot dried chilies
- 5 slices of ginger
- 2 pieces of scallion
- 5 cloves of garlic
- 3 tbsp of soy sauce (Amazon Link:
- 3 tbsp of Chinese cooking wine or Shao xing wine (Amazon Link:
- 2.5 tsp of salt or to taste
- 1 tsp of dark soy sauce (Amazon Link:
- 2 liters of water

INGREDIENTS FOR THE SAUCE
- 8 cloves of garlic
- 1 tsp of salt
- 1 tsp of sugar
- 2 tbsp of Chinese black vinegar (Amazon Link:
- 1 cup of the brine that we braised the meat in
- 3-6 tbsp of homemade Sichuan hot chili oil
OTHERS
- Roasted peanut as a topping (optional)
- Chopped celery to put at the bottom (can also use cilantro or shredded cucumber)

INSTRUCTION
- Soak all the beef parts in room temperature water for 3 hours. Discard the water. Put the book tripe into a different bowl and keep soaking, Add clean water to the rest of the beef parts. Bring it to a boil. Discard this whole pot of water and switch to a new pot.
- Put all the spices into a spice bag.
- Pour in 2 liters of boiling water, along with the spice bag. Continue by adding 2 pieces of scallion, some ginger slices, some garlic cloves, 3 tbsp of soy sauce, 3 tbsp of Shao xing wine, 2.5 tbsp of sugar, 2.5 tsp of salt, a tsp of dark soy sauce. Cover it, turn the heat to low. Simmer for 1.5 hours.
- 1.5 hours later, cook the book tripe in the pot for less than 2 minutes. Take it out. Use scissors, separate those book layers. And set it in the fridge.
- Let’s check back to the pot. Turn off the heat. let the beef part sit in the brine until it is completely cool down, which will take 6 hours.
- To make the chili oil, pour in 2.5 cups of cooking oil in the pot, along with the scallions, crushed garlic, ginger slices, 2 pieces of star anise, 2 cinnamon sticks, and 2 bey leaves. Use low heat slowly heat it and let the aromatics to infuse the oil. On the side, you will need 2 tsp of Sichuan peppercorn powder, 1 cup of chili flake. Make sure you use the chili flakes that fit your spice level, 1/4 cup of sesame seed and 1 tsp of salt. When the scallions start turning a dark color, you can take them out. If you have a thermometer, check the temperature. We want it to be around 400F. Pour it into the chili flake in batches and mix at the same time. If you pour all the oil in once, it will overflow which is dangerous. Wait for this to cool done then you can store it in a container.
- Make the sauce. Use a garlic presser to press 8 cloves of garlic. Add 1 tsp of salt and 1 tsp of sugar. Mix them well. Add 2 tbsp of Chinese black vinegar, 1 cup of brine, and chili oil. Set the sauce aside.
- Slice them into thin pieces and serve over Chinese celery. Drizzle the sauce over it and garnish with cilantro.

ROAST BEEF SANDWICHES WITH ONION JAM:
INGREDIENTS WITH GRAM AMOUNTS
For the garlic rolls
1 stick (113 grams) unsalted butter
1/4 cup (57 grams) olive oil
5 cloves garlic - grated
1/4 teaspoon crushed red pepper flakes optional
1/4 cup (15 grams) flat-leaf Italian parsley - minced

4 large hard rolls
3 tablespoons (17 grams) Pecorino Romano - grated
For the onion jam
1/4 cup (57 grams) olive oil
3 large sweet onions diced, about 2 pounds (907 grams)

3/4 cup (150 grams) sugar

Chicago-Style Italian Beef Sandwich

Ingredients
Pot Roast:
1 boneless beef chuck eye roast (about 3 1/2 pounds), tied with butcher's twine
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
1 medium onion, roughly chopped
1 tablespoon dried Italian seasoning
2 teaspoons crushed red pepper
6 cloves garlic, roughly chopped
1/2 cup dry red wine
5 cups beef stock (or enough to submerge the roast about three-quarters of the way)
2 sprigs fresh thyme
Sweet Peppers:
4 green bell peppers, cut into 1-inch-wide strips
1/4 cup olive oil
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
Sandwich Build:
6 soft hinged French rolls (preferably from Turano or Gonnella bakeries)
Oil-packed hot giardiniera, for topping
Directions
For the pot roast: Position an oven rack in the center of the oven and preheat to 300 degrees F.
Liberally sprinkle the entire roast with salt and pepper. Heat the vegetable oil in a Dutch oven over medium-high heat. Brown the roast on all sides until golden and caramelized, 5 to 7 minutes per side; reduce the heat if the fat begins to smoke. Transfer the roast to a plate and reduce the heat to medium.
Add the onions and a pinch of salt and saute, stirring occasionally, until just beginning to brown, 8 to 10 minutes. Add the Italian seasoning, crushed red pepper and garlic and saute until fragrant, another minute. Deglaze with the red wine, scraping up the browned bits from the bottom of the pot. Simmer until reduced by about half, another 2 to 5 minutes. Add the stock and thyme and bring to a simmer. Adjust the seasoning of the liquid.
Put the roast back in the pot with any accumulated juices and place in the oven, covered. Cook the roast, turning every 30 minutes and uncovering the pot for the last 30 minutes of cooking, until very tender, 3 to 3 1/2 hours. Transfer the roast to a cutting board and tent with foil. Increase the oven temperature to 350 degrees F for the peppers and bread.
For the sweet peppers: Toss the pepper strips with the olive oil, granulated garlic and some salt and pepper on a baking sheet. Bake, stirring halfway through, until lighter in color and softened, about 45 minutes.
Strain the pot roast jus through a fine-mesh strainer into a bowl and return to the pot. Bring to a simmer and simmer until reduced slightly, 5 to 10 minutes. Adjust the seasoning if necessary. Keep warm.
Once the meat has cooled a bit, remove the twine. Pull the meat into smaller chunks and return to the reduced jus until ready to build the sandwiches.
For the sandwich build: Rub the rolls with some of the giardiniera oil and toast in the oven until golden brown and crispy, 5 to 8 minutes.
Place some beef on a roll, then some sweet peppers (with some of the oil they were cooked in), followed by some hot giardiniera. Pour a small dish of reduced jus. Quickly dunk the whole sandwich in the hot jus, then wrap in deli paper or parchment paper and wait for 2 to 3 minutes while the magic happens. Repeat with the remaining rolls and toppings. When ready, open up and eat!

RECIPE BELOW Makes 4 very large Italian Beefs (+ extra Giardiniera)
GIARDINIERA (makes 1qt/ltr)
•150g or about 1 1/3c each of Cauli, Celery, Green Bell Peppers, Carrots
•75g or 1/2 c serrano (or another hot pepper of choice)
•400g or 1 3/4c white distilled vinegar
•200g or 3/4c water
•24g or 1 1/2 tbsp salt
•300g or 1 1/3c light olive oil
•150g or 3/4c ex virgin olive oil
Chop all veg into small dice and mix to combine. Combine vin, water, salt in a sauce pan, bring to a boil, add veg, stir, turn off heat and allow to cook as it comes to room temp. Transfer to container and refrigerate 2 days.
After 2 days, strain liquid off veg. To the strained veg mix, add oils & store in fridge until ready to use.
FRENCH SANDWICH ROLL:
•225g or 1c water (86F/30C)
•9g or 3tsp yeast
•20g or 1 1/2tbsp olive oil
•15g 1 1/4 tbsp sugar
•350g or 2.5c bread flour (12.7% protein)
•9g 1 1/2 tsp salt
Combine ingredients into bowl of stand mixer with dough hook. Mix on low until combined (3min). When dough has begun to form into a ball, increase to high speed and continue mixing for another 6 mins. Transfer to a medium bowl, cover, and allow to ferment at room temp for 90 mins.
Flour dough and work surface and divide into two 300g pieces. Preshape into balls as shown @2:40. Cover with town and allow to rest for 15 min. Shape each piece as shown @3:00.
Place onto parchment lined sheet tray dusted with semolina, place shaped dough rolls onto tray and gently press down to slightly flatten. Cover and let proof for 30-45min until they've grown by about 75%. Score lengthwise.
Bake in a 375F/190C preheated oven for about 30 min (rotating halfway through) until light golden grown.
ROAST BEEF:
•Two 2lb (.9kg) top round roasts, cut in half (1lb for each sandwich roll)
•Neutral cooking oil (canola, vegetable, etc)
•1000g or 1L nice beef stock (recipe below)
•Spoonful bouillon paste (optional)
•Salt to taste
•Bman's Super Secret Beef Spice Blend: 5g each dried oregano, garlic powder, onion powder, toasted coriander seed, chili flake, paprika, toasted fennel seed, black pepper.
Preheat large pot on med-high, add a few plugs of neutral cooking oil, and add in 2 pieces of roast. Sear well on each side. Add beef stock to deglaze. Add spice blend.
Bring to simmer, cover with parchment and load into 250F/120C oven to cook for 60 min. Meat temp should be 140F/61C. Wrap beefs in plastic wrap and allow to cool in fridge.
When ready to use, slice as thinly as possible.
Strain cooking jus into container. When ready to use, add spoonful bouillon paste, heat to 145F/62C, season to taste (should be very salty) and lower heat to low. Add in sliced beef to just warm through.
BEEF STOCK:
•6-8lbs or 3-4kg beef shanks
•2000g/2L water
Roast shanks in very hot oven (450F/230C) for 30min. Add to slow cooker along with all fond from roasting pan and water. Slow cook for 6hrs.
