Easy Roast Beef Recipe with Beef Gravy
Roast Beef slow-roasted in the oven ensures it’s perfectly tender and evenly cooked all the way through. Every bite is juicy and mouthwatering.

Ingredients For the Roast Beef:
►3-4 lb top-round roast
►3 Tbsp extra light olive oil
►1 Tbsp finely chopped fresh Rosemary
►1 Tbsp minced garlic from 3 cloves
►2 tsp finely chopped thyme leaves or 1/2 tsp dried thyme
►1 1/2 tsp fine sea salt
►1 tsp freshly ground black pepper
Ingredients For Beef Gravy:
►1/4 cup cold water
►1 1/2 Tbsp cornstarch
►1/2 cup dry red wine
►1 1/2 cups beef broth
►1/4 tsp onion powder
►1/4 tsp garlic powder
►1/4 tsp fine sea salt, or to taste
►1/4 tsp freshly ground black pepper, or to taste
►2 Tbsp unsalted butter

World's Best Roast Beef Sandwich! (Homemade Tiger Sauce)
Update: I mentioned in a previous version of this recipe that I let
the roast set at room temperature for several hours before cooking.
I re-edited the video to remove that. It should be no more than a 20 to 30 minute rest from the refrigerator... then season!

Remove the roast from the refrigerator and let it rest at room
temp for no more than 20 to 30 minutes!
Use the Eye of Round Beef Roast
Season it with Salt,Pepper, Onion Powder, Garlic Powder.
You can use any seasoning you want... you can also inject
the roast with Beef Stock and seasoning if you wish!
Place a meat probe into the roast at a 45 degree angle
so the tip of the probe is in the middle of the roast.
Bake it in the oven at 300 degrees until the internal
temperature is 105 degrees. Remove the roast and let
it rest until the temp rises to it's highest (122-124) and
then starts to go down in temp before you slice it.
You can then cut it in half so it will fit on your meat
slicer or slice it by hand... but slice it very thin!
While the roast is in the oven make your tiger sauce.
1/2 cup mayo
1/2 cup sour cream
2 tbsp. prepared horse radish
1/2 tsp. dry mustard
1/2 tsp. garlic powder
1/2 tsp. chives
1/2 tsp. lemon juice
1/2 tsp. Dijon Mustard
splash of Worcestershire Sauce
pinch of salt and pepper
Mix well and set aside.
Make you Au Jus...
In a pan mix the drippings from the roast and 1 cup of
beef stock and a pinch of flour. Add a slash of red wine
and simmer for 5 minutes. Add: 1/4 cup diced onions
1/4 cup diced celery, and 1/4 cup diced carrots.
Simmer until it reduces by 1/3. Strain out the vegetables
and add a pinch of sugar and at this point ... salt to taste!
Serve the sliced beef on a sub-style bun topped with sliced
onions and your tiger sauce. Give everyone a small dish of
Au Jus for dipping.
For those that don't like it rare simply simmer a portion of
the beef in the Au Jus until it is how they like it!
