How To make Hope For More Chocolate Cake
1 1/4 c All-Purpose Flour
sifted
1 t Baking Soda
6 tb Cocoa Powder
1/2 c Shortening
1 c Sugar :
(plus 1 Tbsp)
2 Eggs
1/2 c Buttermilk
1/2 ts Vanilla
1/2 c Boiling Water
Marshmallow Icing----- 1 c Sugar
1/4 ts Salt
1/2 ts Cream Of Tartar
2 Egg Whites
3 tb Water
1 t Vanilla Extract
Combine flour, soda, and coca. Sift mixture 3 times. In a separate bowl cream shortening. Add sugar to shortening and cream until light and fluffy. Add the eggs, one at a time, and beat for 2 minutes after each addition. Add the flour mixture alternately with the buttermilk, beating at medium speed after each addition. Add the vanilla. Add the water 1/3 at a time, beating well after each addition. Pour the batter into 2 ungreased 8-inch cake pans. Bake in a
350 degree oven for 20 to 25 minutes.
In the top of a double boiler over simmering water, combine the sugar, salt, cream of tartar, egg whites, and water. Beat with an electric mixer at top speed for 4 to 5 minutes. Remove from heat and the simmering water and beat for 1 minute. Add vanilla and blend. Frost the chocolate

Make your own buttermilk!
For the cake in the video: 4 x 7 tins. Will also work for 3 x 8 tins.
250g Unsalted Butter
250g 70% Chocolate
180ml Brewed Coffee (or 180ml Hot water with 2 tbsp Instant Coffee Granules)
4 Eggs
150ml Buttermilk (see link below for how to make your own)
3 tbsp Vegetable or Sunflower Oil
430g caster sugar
150g Plain Flour
150g Self Raising Flour
60g Cocoa Powder
3/4 tsp Bicarbonate of Soda
1/2 tsp Salt
430g Caster Sugar
100g Butter
200g Chocolate (I like 50% for ganache)
100g Double Cream
If you want to fill and ice with ganache you can double this quantity.
125g Soft Unsalted Butter
225g Icing Sugar
80g Melted Chocolate (70% is best for buttercream)
If you want to fill and ice with buttercream you can double this quantity.
For a 6 cake follow these ingredients. If you need something even smaller just halve all of the ingredients!
190g Unsalted Butter
190g 70% Chocolate
120ml Brewed Coffee (or 180ml Hot water with 2 tbsp Instant Coffee Granules)

115ml Buttermilk (see link below for how to make your own)
2 tbsp Vegetable or Sunflower Oil
325g Caster Sugar

EASY Chocolate Sponge Cake Recipe PLUS Chocolate Buttercream Frosting
This week I'm sharing my super simple chocolate cake recipe which is so easy to make. I'll be showing you how to make the chocolate sponge cake and also how to make yummy chocolate buttercream frosting.

The ingredients you will need to make this 6 inch cake are:
340g / 13oz - Self Raising Flour
400g / 14oz - Butter
400g / 14oz - Caster Sugar
60g / 2oz - Cocoa Powder
4 medium eggs
3 - 4 tbsp - Milk
Bake on the middle shelf for 45 minutes at 180 degrees Celsius (which is 356 degrees Fahrenheit or gas mark 4). If you are using a fan oven you will need to reduce the temperature and cook for a little longer.
For the Chocolate Buttercream:
450g / 16oz - Icing Sugar
250g / 9oz - Salted Butter
45g / 1.5oz - Cocoa Powder
2.5 tbsp- Milk

The Perfect One-Bowl Chocolate Cake Recipe
Learn how to make my go-to chocolate cake recipe that's about as easy as whipping up a box of cake mix, only way tastier! This cake is super moist, decadent, and is packed with amazing chocolate flavor. The full recipe and decorating details are on my blog here:
Ingredients:
2 Cups (265g) all purpose flour
1 2/3 Cups (340g) white granulated sugar
2/3 Cup (60g) unsweetened natural cocoa powder (not Dutch Process)
2 tsp baking soda
1 tsp baking powder
1/2 tsp kosher salt
1/2 Cup (120ml) vegetable oil
2 eggs, room temperature
1 1/2 tsp pure vanilla extract
1 Cup (240ml) full-fat buttermilk*, room temperature DIY recipe in the notes
1 Cup (240ml) hot water
Instructions:
1. Preheat the oven to 350ºF and prepare three 6-inch or two 8-inch cake pans by spraying the sides with cooking spray and fitting the bottoms with a wax paper or parchment cake circle.
2. Place all of the dry ingredients into the bowl of a stand mixer and stir on low for 30 seconds to fully combine them. Add the vegetable oil, eggs, vanilla, and buttermilk and mix on low until just combined. With the mixer still on low, add the hot water in a slow stream, then turn the mixer to medium and beat until smooth, about 2 minutes. The batter will be very thin.
3. Pour into prepared cake pans no more than 2/3 full and bake for 40-45 minutes, until a wooden toothpick inserted comes out clean. Cool completely before frosting with chocolate buttercream or frosting of your choice.
*DIY Buttermilk recipe: add 1 Tbsp of white vinegar to a jar and top it with 1 Cup of whole milk. Stir and let sit for 15 minutes before using in the recipe.
Make ahead tips: this cake can be made ahead and stored at room temperature, covered tightly in plastic wrap, for up to two days. Alternatively, you can cover with plastic wrap and store in the freezer for up to two months before thawing to room temperature.
