How To make Hope's Leek Quiche
12 oz. cleaned, sliced, cooked, drained leeks 5 oz. grated swiss cheese [regular or low-fat] 1 1/3 c. 1% milk 4 egg whites/1 egg yolk or 4 egg beaters 3/4 c low-fat bisquik 1/4 tsp salt 1/4 tsp pepper
Heat oven to 400!. Pam pie plate, 10x1.5". Mix leeks and 2c cheese in plate. Beat milk, eggs, Bisquick, salt and pepper until smooth. Pour into plate over leeks and cheese. Bake until knife inserted in center comes out clean, 25-35 min. Top with remaining cheese and bake 1-2 min longer until cheese is lightly browned. Let stand 5 min before serving. Garnish with tomato slices if desired.
Replace leeks with: 10oz thawed, drained chopped broccoli & 2/3 c chopped onions, or 10oz sliced, cooked zucchini & 1 chopped roasted red pepper, or 12oz miscellanious cooked grated veggies (carrots, zucchini, summer squash, onions, etc)

Pie Crust
1 cup flour
1 stick unsalted butter
1 teaspoon sea salt
¼ cup ice cold water
Broccoli Quiche with Leeks, Rutabaga
1 tablespoon olive oil
½ cup diced rutabaga
1 cup sliced leeks
1 cup chopped broccoli
6 eggs
¼ teaspoon sea salt
⅛ teaspoon black pepper
1 cup milk
1 cup shredded cheddar cheese

Pie Crust
Add 1 cup flour and 1 teaspoon salt to a mixing bowl.
How to Store Flour: stored in an airtight container in a cool dry place, opened flour will last 1 year past the Best By date, 2 years if you place it in the fridge or freezer.
Cut 1 stick of butter into cubes and add it to the flour. Cut in the butter using a pastry cutter or 2 knives, careful to not overwork the dough. It will look like cornmeal when finished.
Slowly add in just enough of the ¼ cup of water to bring the dough together into a ball.
Shape the dough into a disc and wrap it in plastic. Place in the refrigerator for at least an hour.
Roll the dough out on a lightly floured surface. Transfer dough to a 9-inch pie plate and gently press it into the bottom and up the sides. Trim off the edges and press with tines of a fork.
Refrigerate the dough-lined pie plate for at least 2 hours.
Broccoli Quiche with Leeks, Rutabaga
Preheat the oven to 350 degrees F.
Add 1 tablespoons of olive oil to a sauté pan and warm it over medium heat.
Add in ½ cup diced rutabaga and saute for 5 minutes until tender and browned. Add in 1 cup leeks and saute for another minute. Add in 1 cup broccoli and cook for 2 more minutes until florets brighten.
How to Store Leeks: leeks can make other foods smell like leeks. Best not to cut or trim them before storing. Wrap them fully in plastic wrap and place in the vegetable bin. They can keep for up to a few weeks this way.
How to Store Broccoli: trim the end of the broccoli stalk and store them just like cut flowers in the fridge. Broccoli will keep for a few weeks.
Set veggies aside to cool.
Whisk together 6 eggs, ¼ teaspoon salt, ⅛ teaspoon pepper, and 1 cup of milk.
Fill the pie plate by layering between the veggies and 1 cup shredded cheese. Add in the egg mixture.
I got this pie plate from my mom. This Town & Country pie plate pattern was produced from 1974 to 1978.
Wrap the edges of the pie plate with aluminum foil or crust shields and bake the quiche for 45 minutes, or until the center is firm but jiggles a bit.
Let cool slightly before serving but this quiche is great warm or cold. Enjoy!

Leeks and Onion Quiche ( great starter recipe for vegetarians)
Join my online French cooking classes ????????: in this video we look at how to make a French quiche from scratch, step by step. today we are making a leek and onion quiche as well as a mini quiche lorraine. its easy versatile and delicious.
Ingredients:
250 grams of homemade shortcrust pastry see video below
For the filling:
2 whole eggs
2 egg yolks
250 ml of full cream milk (whole milk)
250ml of pure cream at least 45 % fat content (heavy cream)
seasoning: a pinch of salt,cayenne pepper and nutmeg.
the filling is the same for any type of quiche, only the garnish changes so feel free to experiment. ( be careful not to use ingredients containing too much water)
For the garnish:
Leek and onion quiche
1 leek
2 brown onions (sweet onions)
2 teaspoon of unsalted butter to cook the onions and leek.
Quiche Lorraine:
250 grams of pan fried smoked pork belly or pancetta finely sliced
200 of gruyere cheese or swiss cheese or cheddar (last resort)
a bit of oil to fry the bacon
