How To make Honey Whole Grain Bread
3 cups unbleached flour
2 packages active dry yeast
1 1/2 teaspoons salt
1 cup water
1 cup low fat cottage cheese
4 tablespoons butter
1/2 cup honey
2 eggs
2 1/2 cups whole wheat flour
1/2 cup regular rolled oats
2/3 cup chopped walnuts
In large bowl, combine 2 cups unbleached flour with yeast and salt. Heat water, cottage cheese, butter and honey until very warm (120-130). Add warm liquid and eggs to flour mixture. Mix well. Add whole wheat flour, oats, and nuts. Stir in remaining unbleached flour (add more if necessary) and knead until smooth and elastic. Let rise until doubled. Punch down and place in two greased 5 1/4x9 1/4x3 inch pans. Let rise about 1 hour. Bake at 350 for 35-40 minutes. Remove from pans to cooling rack. Brush tops with butter.

100% Whole Wheat Honey Glazed Butter Buns
How to make a hearty and yummy Honey Butter Whole Wheat Buns.
Here's what you'll need:
1 cup warm milk (250ml)
3 tablespoons honey (45ml)
1 large egg
2 teaspoons instant yeast (6g)
3 cups whole wheat flour (375g) spooned and leveled
1 teaspoon salt (5g)
1/3 cup unsalted butter (Skip salt when using salted)
Honey Butter Glaze:
2 tbsps softened butter
2 tbsps honey
Kneading time may take longer than using bread flour or all purpose flour. What I love with this bread is, it remained soft dor days when it is stored in an airtight container.
1. In a mixing bowl, combine milk, honey, egg and yeast. Mix well.
2. Add whole wheat flour and salt. Mix until the dough is formed.
3. Cover for 20 minutes to rest. Then add butter and mix until fully absorbed.
4.Transfer to a lightly floured counter then knead, slap and fold until smooth. About 8-10 minutes.
5. Smooth into a ball and place in an oiled bowl. Cover for 45-60 minutes or until doubled in size.
6. Punch out the dough to release gas.
7. Divide into 12 equal pieces, about 70 grams each dough ball.
8. Cover for 15 minutes. Then flatten and round the dough balls again.
9. Cover and let it rest for 25-30 minutes.
10. Preheat oven at 180C/350F.
11. Brush with milk. Bake in a preheated oven for for 20-25 minutes.
12. Mix all ingredients for Honey Butter Glaze. Then brush on hot buns.
13. Serve and enjoy!

The Best 100% Whole Wheat Bread
Bread is a popular topic around here and we are back with your much requested 100% whole wheat loaf. I have to admit--whole wheat bread is an acquired taste here in the US where we have been so conditioned to flavorless white flours.
So don't be discouraged if your family doesn't grab on to this right away. You can add a bit of white flour to ease them in if needed, but this recipe really is written for use with all whole wheat (make my beginner white bread video and swap up to half of the flour with whole wheat to it if you'd like to).
Today I'll be showing you how to temper the bitterness wheat bread can have while still getting a tender, flavor-complex loaf that's just begging for some butter and jam.

Ingredients:
1 to 1 1/8 cups (227g to 255g) lukewarm water
1/4 cup (50g) vegetable oil
1/4 cup (85g) honey, molasses, or maple syrup
3 1/2 cups (397g) King Arthur White Whole Wheat Flour
2 1/2 teaspoons instant yeast, or 1 packet active dry yeast dissolved in 2 tablespoons of the water in the recipe
1/4 cup (28g) Baker's Special Dry Milk or nonfat dry milk
1 1/4 teaspoons (8g) salt
