Holiday Baking - Pumpkin Spice Muffins
Pumpkin Spice Muffins (Makes 2 dozen)
Ingredients: 3.5 C all-purpose flour; 3C sugar; 1 can pumpkin; 1.5 t salt; 2 t baking soda; 1 t ground nutmeg; 1 t ground cinnamon; 1C vegetable oil; 4 eggs; 2/3 C water; 1C broken nuts
Directions
Put paper cupcake/muffin liners in two 12 muffin pans.
Sift flour, salt, soda, cinnamon, nutmeg into large bowl then stir in sugar
Combine pumpkin, oil, water, and eggs into mixing bowl. Mix well (will take several minutes for it to get smooth and creamy)
Add dry ingredients slowly-about 2 cups at a time, stirring after each addition. Be sure mixture is smooth and has no lumps.
Stir in nuts
Spoon into paper holders. Fill about 3/4s to top.
Bake at 350° for 30-35 minutes or until passes toothpick test.
Let cool in pan for 15-20 minutes on wire rack.
Remove from pans onto wire rack. Let cool completely
Immediately store in covered containers.
For Pumpkin Spice Bread...
Everything is the same except for the pans.
Pour into 3 8”x4”x2” greased and floured loaf pans. As long as the pan size is close to these dimensions it is fine.
Bake at 350° for 45-60 minutes or until passes toothpick test. I set oven timer at 45 minutes and test. If necessary, I bake longer in 3 minute-intervals.
Follow same cooling instructions.

Ingredients:
1 1/2 cups all purpose flour
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp pumpkin pie spice (I used 2 tsps)
1/4 tsp salt
1 1/2 cups pumpkin puree
1 egg
1/4 cup melted butter, cooled
1 tsp vanilla extract
Cream Cheese Filling:
4 oz cream cheese, softened
2 tbsp sugar
1 tsp all purpose flour
1 tsp milk
1/2 tsp vanilla extract
Directions:
Into a bowl, mix together the pumpkin puree, egg, butter and vanilla extract until everything is well combined. Add in the dry ingredients. Give everything a quick mix, but don't over-mix.
Grab your muffin pan, line it with paper cupcake liners or, if you don't have any, spray with non-stick cooking spray. Fill up each liner with the pumpkin batter 3/4 of the way.
Make the cream cheese filling. Mix all of the ingredients together until smooth. Place the filling into a piping bag. Squeeze out about a tablespoon's worth of cream cheese into each muffin. If you want your muffins to have a dollop of cream cheese on the top, pipe a small amount on top.
Into the oven at 350 degrees for 15-20 minutes. I left mine in for the full 20 minutes. Enjoy!
