Healthier Delight: Cookie Monster Cheesecake by Holly with 50% Fewer Calories!
In this video I share a delicious macro-friendly, lower fat Cookie Monster Cheese Cake Recipe!!! The best part of this recipe? It's about 1/2 the calories of a regular cheesecake!

This is awesome ! Everyone needs to try this in their life, the recipe makes 12 serves.
Cheesecake Filling:
200g 1/3 Fat cream cheese
200g Galbani No Fat Ricotta cheese
Gelatine 2 sachet
25g (1 cup) stevia sugar
pinch of salt
10 drops blue gel food coloring
1 tsp vanilla extract
3 eggs or 3 serves of egg stirs
150g Oreo cookies
Cookie Blondie Base:
80g butter (75% less fat I can’t believe it’s not butter )
Pinch salt
25g (1 cup) stevia sugar
1 egg or 1 serve egg stir
1 tsp vanilla extract
50g (1/2 cup) gluten free all-purpose flour
50g (1/2 cup) coconut flour
50g semisweet chocolate chips
Chocolate Ganache
50g semisweet chocolate chips
1/4 cup cocoa powder
100g 1/3 Fat cream Cheese
1 egg or 1 serve Egg stirs
Instructions
Preheat the over to 380 degrees.
Spray an 8 springform pan with olive oil
In a microwave safe mixing bowl, combine butter, salt, and stevia sugar. Heat for 30-second until butter is melted, stirring each time. Set aside to let cool slightly.
In a food processor, add the egg and vanilla along with the butter mixture and blend until well combined.
Add flours in to the batter and blend well each time.
Once mixed together, fold in chocolate chips.
Transfer the batter to a prepared pan and spread evenly. Bake for 15 minutes.
Remove from oven and let cool.
Cheese cake filling
Preheat oven to 300 degrees. In a large mixing bowl, whip together cream cheese, ricotta cheese, and stevia sugar until smooth. Add in salt, blue food coloring, and vanilla, continuing to whip until all ingredients are well combined. Use more blue food coloring until the color is the right shade of blue. Add in one egg at a time, mixing until fully combined. You can also use a food processor if you prefer. Fold in crushed oreos, do not over mix.
Pour cheesecake batter over cooled base layer. Place the baking tray in the oven and bake for 60 minutes.
The cheesecake should be set but still move slightly in the middle.
Turn off oven and let the cheesecake cool for 15-30 minutes while still inside the oven with the oven door left ajar. Refrigerate for 30 minutes.
To make the garnish
Place chocolate in a heatproof bowl. Add in the salt, microwaving in 30-second intervals, stirring in between until chocolate is melted. Once smooth, add the cocoa powder and let cool. Add in the cream cheese, it needs to be thick and cool while still being spreadable.
Spread over the cooled cheesecake using a hot knife then return to the refrigerator.

►1 1/2 cups graham cracker crumbs (from 12 whole crackers)
►1 Tbsp granulated sugar
►8 Tbsp unsalted butter (1 stick)
Ingredients for No-Bake cheesecake:
►16 oz cream cheese (from 2, 8-oz blocks), room temperature
►2/3 cup granulated sugar
►2 Tbsp sour cream
►2 Tbsp lemon juice, freshly squeezed
►1 cup heavy whipping cream

Baklava cheesecake: the creamy and tempting Turkish dessert!
INGREDIENTS
For the base:
8 phyllo pastry sheets
45 g (3 tbsp) butter, melted
For the pistachios:
100 g (1 cup) pistachios, chopped
40 g (2 tbsp) butter, melted
70 g (½ cup) powdered sugar
For the syrup:
180 ml (¾ cup) water
150g (¾ cup) sugar
5 ml (1 tsp) lemon juice
For the filling:
420g (1 ⅔ cup) cream cheese
200ml (¾ cup) full-fat cream
150g (¾ cup) sugar
1 tsp vanilla sugar
30g (2 tbsp) all-purpose flour
1 egg
METHOD
1. Preheat the oven to 190°C/374°F.
2. Fold the phyllo pastry sheet and layer the into a 20 cm baking pan making sure to cover the bottom and the sides. Brush each sheet with melted butter. Bake for 3-4 minutes.
3. Meanwhile, combine chopped pistachios with butter and powdered sugar.
4. Layer half of the pistachio mixture on the bottom of the phyllo base, pressing with a spoon well.
5. Whip ingredients for the filling together. Gently pour the filling on top of the cheesecake base.
6. Lower the oven temperature to 160°C/320°F. Bake the cheesecake for 1 hour.
7. Mix ingredients for the syrup in the saute pan, and place over medium-low heat. Cook for 10 minutes after boiling.
8. Pour some syrup on top of the cheese filling and brush some on the sides.
9. Top with the remaining pistachios and some more syrup.
