Holiday Gluten Free Eggnog cheesecake

Ingredients for the gluten free crust:
• 3 Tbsp butter softened
• 1/2 cup sugar
• 3/4 tsp. ground cinnamon
• 3/4 cup Extra White Gold gluten free all- purpose flour
• 1/3 cup almond flour
Cheesecake filling
• 3 (8 ounce) packages cream cheese, softened
1 cup white sugar
3 tablespoons Extra White Gold gluten free all-purpose flour
• 1 cup eggnog
• 2 large eggs
• 1 tablespoon vanilla extract
• 1/4 tsp ground nutmeg
Directions
1. Preheat oven to 350 deg F
2. Beat the butter, sugar, and cinnamon until crumbly. Add flours. Press onto bottom of a 9-inch springform pan coated with cooking spray or butter.
3. Bake for 10 minutes. Place on a wire rack to cool.
4. Preheat oven to 425 degrees F (220 degrees C). Wrap the bottom of the springform pan with foil and baked it in a water-filled cookie pan.
5. In a food processor combine cream cheese, 1 cup sugar, gluten-free flour, and eggnog; process until smooth. Blend in eggs, vanilla and nutmeg. Pour mixture into cooled crust.
6. Bake for 10 minutes.
7. Reduce heat to 250 deg F and bake for 45 minutes, or until the center of cake is barely firm to the touch. Let cake cool completely in the oven- turn off the heat and let it cool down, before removing the rim.
8. Serve with whipped cream and a dash of cinnamon.

Eggnog Cheesecake Recipe
Crust
2 1/2 Cups Gingersnap Cookie Crumbles (250 Grams)
1/2 Cup (1 Stick) Unsalted Melted Butter
1 Teaspoon Nutmeg
1/4 Cup (50 Grams) Sugar
Cake
32 oz (4 Packages) Cream Cheese
1 1/2 Cup (300 Grams) Granulated Sugar
1/2 Teaspoon Salt
1 Tablespoon Vanilla Bean Paste
3 Tablespoons Flour
1 Cup Eggnog
5 Eggs
1 Teaspoon Nutmeg

Nothing says Christmas holidays like egg nog... So put some in your cheesecake dessert!
Ever made a cheesecake in your blender? Why not? It's so easy, and the result is light and airy!
Ingredients
1 cup (100g) graham cracker crumbs
2 Tbsp (25g) granulated sugar (for crust)
3 Tbsp (45g) butter melted
3- 8 ounce packages cream cheese
1 cup (200g) granulated sugar
3 Tbsp (25g) all-purpose flour
¾ cup (180 mL) eggnog
2 eggs
2 Tbsp (30 mL) rum
½ tsp ground nutmeg
Method:
Preheat oven to 350°F (180°C).
Mix graham cracker crumbs, sugar, and butter; then press into the bottom and up the sides of a 9” spring form pan.
Bake 10-15 minutes until light golden, then cool to room temp.
Place eggnog, rum, eggs, flour, sugar, nutmeg, and cream cheese into your blender.
Turn machine on to High or liquify, and blend for 30 seconds or so - until smooth.
Pour mixture into pre-baked crust and bake 45-50 minutes, or until cake is barely firm to the touch.
Cool to room temp and remove ring.
Cover and refrigerate until completely chilled before serving.

This recipe calls for rum extract. But if you want to make a really festive Eggnog Cheesecake, break out the good stuff and add liquor. The alcohol in rum will cook off but the flavor is incredible. Hello Friends! Today on Kathycooks4U we are going to create an amazing Eggnog cheesecake. If that doesn't sound amazing enough...the crust is made up of Vienna fingers (vanilla sandwich cookie), toasted coconut, and toasted pecans. I would eat the crust alone it is so tasty;)

The Perfect Eggnog Holiday Cheesecake
1 ¼ cups sweetened flaked coconut (toasted)
12 vanilla sandwich cookies (I used Vienna Fingers)
½ cup chopped pecans, toasted
¼ cup butter or margarine, melted
4 8oz packages cream cheese softened
1 cup sugar
½ cup eggnog
1 Tablespoon cornstarch
1 teaspoon cinnamon
¼ teaspoon nutmeg
2 Tablespoons dark spiced rum
4 large eggs roomtemperature
1 teaspoon vanilla extract
Crust
Process cookies and pecans in a food processor until cookies are finely crushed. (You can chop the pecans like I did for a more rustic crust)
Combine cookies, coconut, pecans, and melted butter. Press into bottom of a 9 inch springform pan.
Bake at 350 for 10 minutes
(reduce temp of over to 325 when crust is out of oven)
Cake
Beat cream cheese at medium speed until creamy. Gradually add in the sugar, beat well. Add eggnog, cornstarch, cinnamon, rum, and nutmeg. Add eggs 1 at a time, beating just til yellow disappears. Stir in vanilla.
Pour batter into baked crust.
Bake at 325 for 55 minutes or until set. Remove from oven, and run a knife around the edge of the pan.
Cook completely on a wire rack. Cover and chill for 8 hours or overnight. Garnish if desired with dollups of whipcream and toasted coconut.
