When we think of summers growing up we think of angel food cake. There’s something about the lighter-than-air cake that, when paired with berries, immediately takes us back to all those hot days when angel food cake was just the thing to satiate our sweet tooth without being too heavy in the heat. Well we’ve gone a couple steps further than a simple angel cake and some fruit, but the updates we’ve made have really catapulted this dish into our top tier of favorites, plus, you can make this any time of year. So let's roll up our sleeves and get started...
We require...
500 gms D'lecta Cream Cheese or any Cream Cheese available
Digestive Biscuits
125 gms Blueberries for Compote/slurry
1 Packet Amul Fresh Cream or any Fresh Cream available
8 tablespoon Powdered Sugar
2 tablespoon Melted Butter
1 tablespoon Corn Flour
1 egg (optional)
2 teaspoon vanilla essence
1 lime juice
Lime zest
Cooking Instructions :
- Bake the base for 10 mins @ 180 degrees
- Bake the cheesecake for 50-60 mins @ 180 degrees
- DON'T FORGET THE HOT WATER BATH...
- Avoiding egg increases the shelf life of the cheesecake, makes no difference to the taste

STRAWBERRY WHITE CHOCOLATE CHEESECAKE (Serves 6-8 people)
✅For the Crust:
-150 grams Nice biscuits, crushed
-60 grams butter, melted
✅For the Cheesecake:
-120 grams strawberries
-50 grams caster sugar
-1 tablespoon water
-100 grams cream cheese, softened
-100 grams white chocolate, melted
-100 grams heavy cream, whipped to stiff peaks
✅Process:
1. Make the strawberry sauce topping by adding the roughly chopped strawberries, sugar and water in a saucepan.
2. Cook on medium heat until the sugar melts, the berries release their juices. They will soften and thicken up considerably.
3. Transfer to a bowl and refrigerate so it cools down completely.
4. To make the crust, add crushed biscuits and melted butter in a bowl. Mix well until it resembles wet sand.
5. Plop this mix into a well greased 6-inch loose bottom cake tin.
6. Use the back of a spoon or a flat glass bottom to firmly pack the crust together. Refrigerate until needed
7. In a bowl, whisk cream cheese until smooth. Add the melted white chocolate and whisk again on medium speed for 30 seconds.
8. Whip some heavy cream to medium stiff peaks and then add it to the cheesecake batter and whisk everything again for 30 seconds until everything is incorporated.
9. Transfer to a piping bag, pipe half the batter on the crust. Spread it out and add tiny dollops of the strawberry sauce along with the fruit.
10. Top with rest of the cheesecake batter, spread it out and add more dollops of strawberry sauce. Use a knife or offset spatula to swirl everything around giving it a marble / ribbon effect.
11. Smooth it out and refrigerate overnight to set.
12. Unmold the cheesecake after it’s set well and pipe swirls of cream and decorate with strawberries. Serve.

Ingredients:-
500 gms D'lecta Cream Cheese or any Cream Cheese available
1 Packet Lotus Biscoff Biscuits
Lotus Biscoff Butter Spread (1 tablespoon for the batter, 4/5 tablespoon for layering)
1 Packet Amul Fresh Cream or any Fresh Cream available
15 teaspoon Powdered Sugar
Melted Butter (as required)
2 teaspoon Corn Flour
1 egg (optional)
1 teaspoon vanilla essence
1 lime juice
Lime zest
Method:-
1) Powder the lotus biscoff biscuits, add melted butter and mix .Pat it to the base.
2) Bake at 180 degrees for 10 mins. Remove and let it cool.
3) Until then, mix all wet and dry ingredients together, make sure the batter is not lumpy.
4) Cover the tin with aluminium foil, use a microwave safe plate to keep the tin on, pour some water in the plate (helps improve cheesecake texture)
5) Pour the cheesecake batter.
6) Bake at 180 degrees, on low rack, for 50 mins.
7) Remove and let it cool.
8) Spread generous amount of Lotus Biscoff Butter Cream/ Spread.
9) Decorate it with Lotus Biscoff Biscuits as you like.
