How To make Herbed Rice with Julienne Potatoes
1 c Basmati rice
2 md Potatoes, peeled
1/2 tb Fresh ginger
2 ts Green chilies, minced
1/4 c Coconut
2 tb Parsley, fresh
3 tb Ghee
6 Whole cloves
1 1/2 Inch piece cinnamon stick
1 sm Bay leaf
1 1/2 ts Whole cumin seeds
1/2 c Frozen peas, defrosted
1 ts Salt
3/4 ts Turmeric
1 ts Lemon juice
2 1/4 c Water
1 ts Sugar
1 tb Ghee
5 Lemon wedges to garnish
Wash the potatoes & cut them evenly into julienne strips. Combine the ginger root, chilies, coconut, parsley in a bowl. Add a little water or soy milk, mix well. Drop in potato strips. Set aside. Heat the ghee in a heavy pot, drop in the whole cloves, cinnamon, bay leaf. Fry till the cumin seeds turn brown. Add the marinated potatoes & stir fry till they are lightly browned. Add the rice, salt, turmeric, lemon juice, water & sugar. Stir & quickly bring to a full boil. Reduce heat to very low & cover with a tight fitting lid. Simmer gently for 20 to 25 minutes. 5 minutes before the end, add the peas. Remove lid, turn off heat & add 1 tb ghee. Let rice sit for 5 minutes. Fluff & garnish each portion with lemon wedges. Serving –4 nos
Preparation time – 15 mins
Cooking time – 10 mins
Ingredients quantity
Baby potatoes(par boiled) 1 cup
Fresh dill leaves 2 bunch
Oil 2-3 tbsp
Cumin 1 tsp
Asafetida a pinch
Green chillies(slits) 8 – 10 nos
Ginger juliennes 2 inch
Salt to taste
Coriander powder 1 tbsp
Red chilly powder ½ tspn
Turmeric powder ½ tspn
Dry mango powder 1 tspn
Garam masala ½ tspn
Fresh coriander leaves 2- 3 tsp
Method :
1. In a pressure cooker par boil the baby potatoes for 1 whistle .
2. Let it cool down and cut it into half , keep aside .
3. Heat oil in a non stick pan & add cumin seed , asafoetida , green chilly , ginger, , sauté it well .
4. Now add baby potatoes ,sauté it well for 4-5 mins .
5. Add salt ,coriander powder ,red chilly powder ,turmeric powder , dry mango powder , garam masala , mix it well on a slow flame for a min.
6. Once the baby potato is almost done , add dill leaves , mix well for 2 mins .
7. Now add coriander leaves , stir well for a min .
8. Transfer it to serving plate , garnish with ginger julienne & serve hot .

Pommes persillade (Crispy herby potatoes)

The potato is such a wonderful thing, it's versatile, tasty and cheap. There's so many things you can do with them, including this recipe for pommes persillade. Persillade is basically French for parsley and garlic, so it stands to reason that they both must be included.
That being said, you can add other herbs to it as well, such as chervil, oregano and chives. Tarragon works brilliantly with pork, chicken and white fish, so you could add that in as well.
To make my simple pommes persillade you will need
►4 medium sized potatoes (I used maris piper)
►A good bunch of fresh parsley
►About 1/2 a red onion finely diced
►3 large cloves of garlic
►Salt & pepper
►A good knob of butter
►Vegetable oil for cooking
